No, I didn’t blend up a pizza. I’m not THAT crazy! But my BFF, the immersion blender, helped me out in my pizza creation!
Remember when I made the carrot puree that I fell in love with? Well, I really wanted to work it into some more dishes, because it’s just that freakin’ awesome. I looked in the fridge, and saw my neglected package of Flatout Multigrain Wraps. Oh, how I would love a pizza. I figured, well, I can eat it with a fork and knife, as long as I top it with soft, minimal chew foods. Like a base of carrot puree! Perfect!
With a few more ingredients kicking around in the fridge – spinach, chickpeas, BBQ sauce, and cheese, I created my Carrot Spinach Chickpea BBQ Pizza – click for the full recipe.
You better believe it was awesome. The BBQ sauce gave it the right amount of kick, and the carrot puree made a great alternative pizza sauce. I think it would go well with alot of different toppings. I would gladly add some chicken, onions, mushrooms, pineapple…I could go on. I’ve pureed all my carrots now though, I must buy more this weekend!
I did only end up eating half the pizza though, because well, it just takes a long time to eat pizza cutting it up with a knife & fork into little bits. At least I have lunch made for tomorrow
Before dinner, I ran to the gym for a quick 30 min on the stationary bike. I would have liked to do a harder or longer cardio workout, but I’m still feeling a bit lightheaded, and didn’t want to push it too hard after having skated for 1 1/2 hours last night. It was really nice to though to get in some moving, and some magazine reading time. I think I should incorporate the bike a little more often. I actually think it will be great for when I’m back in school, since I can study while getting in a bit of workout!
Tonight also saw the return of the Chocolate Peanut Butter Banana Blended Treat! Oh yeah baby
I did a horrible job blending this one. Can you see the little bits of cocoa powder that somehow managed to stay dry? And I used white chocolate peanut butter this time, and I don’t think it blended as well in it. But it still tasted spectacular!
My cat, Sienna was in a weird mood tonight. She was not impressed when I brought out the camera. I’m sure it had nothing to do with me taunting her with my finger.
So not impressed.
Such a silly kitty. Who refuses to open her eyes once she sees the camera. Brat.
Well, that’s about it for now. Payday Friday tomorrow, and I’m going out for dinner. That should be an eating adventure. Night!
