OMG…the party upstairs went on until at least 2:30 am. I stayed up playing some Wii until almost 2, mostly because there was no point in trying to sleep. And I figured if their music could be that loud, then so could mine ;) I was rocking out with the iTunes on random. But I had to go to bed and attempt to sleep, even though they were still going strong upstairs. Needless to say, I may have slept in this morning. So again, I’m bringing you brunch :D
Our favourite chocolate-covered blogger Katie has some great oatmeal creations. One that I knew I had to try was her S’mores oatmeal. I finally picked up the necessary ingredients, and put my own little spin on it :D
- 1/2 cup oats, milk, water
- 1/4 tsp vanilla
- 2 tsp flax seed (had to get something healthy in there!)
- 1 tbsp Peanut Butter & Co. Dark Chocolate Dreams peanut butter
- marshmallow creme
- chocolate chips
- 1 1/2 graham crackers, crumbled
I cooked up the oats, milk, water, and vanilla, then added the flax seed. Then in true Katie fashion, I blended the whole mix up with my immersion blender. Then I swirled in the dark chocolate pb & a little bit of marshmallow creme. I scooped it into the bowl, and topped it with more marshmallow creme, chocolate chips, and graham crackers.
Since this was brunch, I also had a piece of sourdough toast with some raspberry jam.
Rounded out with a glass of tart cranberry juice, to balance out the sugar overload of my oatmeal!
Holy dessert for breakfast Batman! I love the dark chocolate pb swirled in. If a s’mores and a Reese Peanut Butter Cup had a baby, it would be this oatmeal!
I think it’s time to get outside in the sunshine to work off this sugar high. Later!
