Recently a friend of mine asked me to do some nutrition counselling for him. I jumped at the chance to practice my skills (it’s a long time between the end of classes and the beginning of internship). One of the things we focused on was quick, nutritious breakfast options for someone with little time in the morning. I spent some time pondering what I enjoy eating for breakfast, and looking through some of my cookbooks for inspiration. One of my quick breakfast ideas was the good ol’ smoothie!
Not only are smoothies a quick and nutritious way to start the day, but they have an unlimited number of flavour combinations, and if you have a travel mug, they can even be breakfast on the go.
I like to follow some basic principles when building a smoothie for a meal:
- Include 2 – 4 servings of fruits and vegetables
- Include some healthy fats
- Include protein to give it staying power
My liquid of choice is usually milk (could be dairy, almond, soy, coconut, etc), because I like the creaminess it lends compared to juice as a base. Plus this way, I can usually pack a little vitamin D and calcium in as well.
The inspiration for today’s smoothie came from a milkshake I once had years ago while babysitting. We were blending up fruits with milk and ice cream, and I remember deciding to use honeydew melon (as it is my absolute favourite melon – totally trumps silly cantaloupe), and how it was an amazing combination.
I figured since the melon was green, why not turn this into a full on green smoothie? Who doesn’t need another delicious green smoothie recipe in their repertoire, right? I looked through the fridge and cupboards, and selected an array of green ingredients, keeping my smoothie principles in mind – avocado, spinach, hemp seeds, mint leaves, and matcha powder.
I whizzed it all up in the blender with some unsweetened almond milk and a splash of vanilla, and soon enough I had a delightfully green breakfast ready for me. If you have ever had a green tea frappucino from Starbucks, this was reminiscent of that flavour wise. I’m not exactly sure how, but I’m totally okay with that.
Minty Melon Matcha Smoothie
Start your day off with a hefty dose of green goodness! Honeydew melon combines with avocado, spinach, matcha, and hemp seeds to create nutrient filled delicious breakfast that definitely beats the pants off any of those blended drinks from the local coffee bar.
- 1/4 small honeydew melon
- 1/2 avocado
- 1 cup baby spinach
- 1 tbsp hemp seeds
- 1/2 tsp matcha powder
- 4 – 5 large mint leaves
- 1 cup unsweetened almond milk
- splash of vanilla
1. Combine all ingredients in a blender. Blend on high until smooth.
Note: If your melon isn’t super sweet, add a touch of honey, agave, or maple syrup to the mix. It all depends on your taste.
