Score One For The Good Guys

My boys won their game tonight! WOOT! Although, it got a little touch and go in the 3rd period, when the ‘Hawks tied it up. I had faith though, and my Canucks pulled through. Can’t wait for Game 2 on Saturday night – I already have plans to watch it with my friend on a good tv (you know, where I can actually see the puck).

I also had some quality time with my couch, blanket, and cat while watching the game. I’ll admit to dozing a little in the first, until we scored 😉 That definitely woke me up! I also took the opportunity to start perusing my new book.

Yes, I too was sent a copy of PETA’s Vegan College Cookbook. When I was first contacted by them to review the book, I had to think about it before saying yes. I do not agree with the way that PETA promotes their message much of the time, so I didn’t know if it would be right. But then I figured, no, why not give it a chance. I mean, it’s a cookbook, which automatically piques my interest, and I wanted to see how it was presented – was it going to be like some of their campaigns that I take issue with, or was it going to be just another cookbook. Plus, even though I’m not currently a college student, I’m heading back to university in a few months, so maybe some of their quick eats will help me out while I’m busy with school! I’ll give a full review on the book once I’ve given it a good read through, although you can see, I’ve already highlighted a couple things in it. Stay tuned!

Eventually, I decided I was hungry enough to make dinner. I’ve been really nibbly when I get home from work lately – I blame hormones – taking a couple crackers here, a few chocolate chips there, so I haven’t been getting super hungry for dinner. I was in the mood for some veggie & pasta action tonight!

I’ve made this dish before. Basically, I steamed up some carrots, broccoli, cauliflower, frozen spinach, and frozen corn. Then I boiled up whole wheat pasta (penne and macaroni, only because I didn’t have alot of either). Then I toss the whole lot in butter, olive oil, salt, pepper, garlic/onion powder, and parsley.

And you gotta top it off with some shredded parmesan! Perfecto!

It’s so easy, and tastes great. I love that I can just open the produce drawer and toss in any veggies I have on hand (although, this is an awesome combo). It would be good with some chickpeas as well, or mushrooms. I would highly recommend it – you can’t really get much simpler than that!

After the hockey game, some dishwashing, chatting on the phone, it was dessert time – sundae!

Two scoops of So Delicious Chocolate Coconut Milk Ice Cream, topped with marshmallow creme, Peanut Butter & Co. Dark Chocolate Dreams, coconut, and almond slices. Totally hit the spot.

It totally seems like Friday night to me for some reason, but alas, I have to get up to go to work tomorrow. I guess that means it’s time to watch the news and get in some reading before night night time. Night!

    I love that idea for a quick pasta recipe…I love my pasta with tons of veggies 🙂 Yay for the Canucks tonight!

    I went through a similar thought process with the PETA cookbook–definitely do not agree with their tactics, but I’m always up for some new meal ideas:)
