Funkytown

Boys & girls, I’m feeling in a bit of a funk today. I think I’ve been on the verge of funk all week, but today was a bit ridiculous at work. Our computer server basically died midday, so we had no access to anything. It was on & off for the rest of the day. Most people left early, but lucky me, I got to stay until our office was closed, just in case someone called and they needed help with something. Which really, doesn’t make much sense, because I probably couldn’t help them, since I had no access to any of our work.

Then after work I ran some errands, which was fine. Then I hopped on downtown to check out a store that a coworker suggested – they have some really nice, good quality hoodies, and I’m in the market for a new one. Alas..they didn’t fit right. By this time, it was 6:30, and I hadn’t been home yet, and when clothes shopping doesn’t go my way, it’s bad news bears.

Let’s look at some food, shall we? Lunch is a good place to start.

Leftover pizza – bison sausage, mushrooms, orange pepper, onion, spinach, mozza, parmesan.

Other things consumed at work, probably out of sheer boredom since we had no work – Reese’s Pieces & some wild rice sticks. Damn coworkers and their bags of bulk treats!

Dinner! I had no desire to put effort into dinner by the time I got home, but hey, I got in my veggies!

Perogies with sour cream. Mmmmm, potato-y, doughy goodness.

After dinner, I hit up the gym. It was probably, 8:40 pm by this time? I opted for cardio fun – 35 min on the stairclimber and 25 min incline walking on the treadmill. And guess what Funky McFunkerson did? Forgot to put on the watch part of my HRM. So I’m wearing the stupid chest strap, with no watch. My brain had obviously shut off for the night. I did 5 min of abs afterwards, and called it a night.

I came home, and spent some time getting so fresh and so clean. I also washed all the dishes, then needed chocolate. Chocolate tofu pudding to be exact.

This one was a chocolate coconut pudding creation. And I conquered the bitterness! Yay!

  • 1/3 block Mori-Nu Firm Silken Tofu
  • 2 tbsp unsweetened vanilla almond milk
  • 1 tbsp cocoa
  • splash of coconut extract
  • 1 tbsp brown sugar
  • shredded coconut
  • creamy coconut spread
  • chocolate chips

It was pretty awesome. I wish they sold Mori-Nu in bulk – it makes the best desserts! And uber-creamy oats.

And that, my friends, ends Friday. I have not packed ANYTHING yet to leave tomorrow on the ferry, and frankly, I’m just not in the mood this evening. So I think I shall hop into bed, and wake up early to get all that done. And hopefully when I wake up, this trip to Funkytown will be over. Night!

    I feel you with it being a bit of a ‘funk’y Friday. Your perogies reminded me I have some at the back of the freezer, I think I’ll use them up soon.

    Ehh, sorry about your day. At least you had some amazing foods!!! That pudding needs to get in my belly!

    Doesn’t it just suck when you want to shop and then nothing fits you?! It puts me in such a crappy mood for the rest of that day.

    i’m feeling the funk too…we can pull out of it.

    and last WCMC bar? sadness…i’ve had one when jenn sent it to me, and have yet to find it again…sigh, the horror.

    I get the exact same when clothes shopping takes a northward turn! Cranky pant supreme!

    Your pizza looks just as good today as when it was hot out of the oven!! 😉
