You Did What?!

It’s true…I went running. Did hell freeze over, and no one tell me? It’s not that I haven’t run before, but only when forced to (like in gym class). I tried running with a friend, but it’s not my thing. But tonight was the first Skating Boot Camp night, and we did running intervals (in the rain to boot). It was 1 min running, 1 min walking for 15 min, a 5 min fast walk, then another 10 min of 1 min intervals. We also did a really thorough warm up and good cool down/stretch for a total of 1 hour. I’m not going to say it was fun, but I made it through. I think intervals are the only way to make it bearable though. All I can feel when I run is the pounding up through my butt, back, shoulders, and neck – and we were running on a bark mulch trail. And yes, I have proper shoes that are in good shape. I think I did a good job pacing myself though, even if I was at the back of the pack. Can’t say I’m in any hurry to try it out again though.

Before I left, I made myself pre-dinner, so I wouldn’t be starving. It was going to be a silken tofu mousse, but I also wanted to use up a super ripe banana on the counter. Then I figured I’d add some protein powder a la Erin. Basically, it was somewhere between a smoothie & pudding. So I served it in a bowl with a spoon 🙂

I whizzed up the following with the immersion blender:

  • 1/3 block Mori-Nu Firm Silken Tofu
  • 1 banana
  • 1 tbsp cocoa
  • 1 tbsp peanut butter
  • 1 scoop vanilla whey protein powder
  • splash of milk
  • sprinkle of brown sugar

I probably could have done without the milk, so it would have been even more like pudding, but it was very good as is 🙂

If only I still had some silken tofu. I obviously need to go shopping.

After said run, I made dinner part 2. First I grilled up a salmon burger.

Emptied the last few Kashi crackers out of the box (cleaning out those cupboards).

Then I whipped up a side caesar salad, added a couple of dill pickles, and a little mustard for dipping, and dinner was served.

Nothing fancy, but it worked. I have no time for fancy at 9 pm!

I must say, today has been a tiring day. I think I’m going to hop into a hot shower, then get into bed with some reading. Hopefully this rain storm goes away, so my bike ride to work tomorrow is much more pleasant 🙂 Night!

    That run sounds intense!!! And in the rain, no less. I feel your pain.

    I really have to try your mousse creations because they look so darn tasty! I’ll have to remember the tofu when I shop this week!

    Yum, that tofu mousse sounds so good! I’ll have to break up the blender and try it!

    Hmm, even though your running wasn’t the most enjoyable experience.. (ugh, I hate running in rain!) – good for you for getting out there!!
