Rollin’ Rollin’ Rollin’

Tonight’s dinner was courtesy of my freezer – even my mom said to me this past weekend I need to start eating up the food in the freezer before I move! So I rummaged through, and found a Turkey Mushroom roll up to reheat.

I made these quite awhile ago, but basically, the inside of the roll up has ricotta, spinach, and mozzarella. Then it’s covered in a ground turkey/mushroom sauce, and topped with a little mozzarella. Definitely rich tasting.

I paired with with some simple steamed broccoli & carrot, with a little butter, black pepper, and onion powder.

Apparently I need to clean the vegetable “sweat” off the plate before I go snapping photos. I apologize for that.

After watching the news, then a quick nap on the couch, I was off to the gym. I did a easy 20 min on the elliptical to warm up, then did some upper body work and abs. I would have done more upper body work, but I’m still having pain in my thumb, so it can be hard for me to grip things for long periods of time. It’s quite annoying actually – plus it’s my space bar thumb, so even typing sucks!

I had a ripe mango that needed to be eaten up, so I knew what I was having when I got home.

I chopped up the mango, added a scoop each of So Delicious Coconut and Chocolate Coconut Milk Ice cream, and topped it with some of my new granola – Kingslake & Crane Mahalo Mix. This is some mighty fine granola – not too sweet, and wicked crunch! I also like that all their packages are resealable – that way it will stay crunchy and not go stale.

Alas, there is a sink full of dishes calling my name, so I shall have to leave you. Friday tomorrow – yay!
