When I was at the market this past weekend, I decided to pick up a vegetable I’ve been meaning to try out for quite some time, but never get around to it. What is this vegetable, I’m sure you are asking? Fennel. It’s always so pretty looking, but I never really knew what to do with it. When I saw a large pile of fresh looking fennel at the market, I figured it was a sign.
I decided to roast up a few veggies before heading out to boot camp, so that the majority of my dinner would be ready when I got home. Speaking of boot camp – tonight was either running, blading, or biking on one of the trails here. I went with the biking option. It was a great night to be out on the bike 🙂 Anyways, I digress. I roasted up some veggies – fennel, onion, and potato – in some olive oil, garlic, salt & pepper.
I also threw one of the mini acorn squashes into the oven to cook up. I had 1/4 of the mini squash, with a little buttah 😉
When I got home from boot camp, I threw some chicken on the Foreman, that I had marinated in some random seasoning blend, canola oil, garlic, pepper.
With a little side of spring mix in a drizzle of Annie’s Honey Mustard Dressing. It was a colourful plate of eats 😀
So the fennel. I knew it was supposed to be licorice flavoured, but I didn’t realize it was that strong. I’m not really a licorice person, so it wasn’t my favourite. I didn’t hate it, but I wouldn’t be in any hurry to buy it again. Plus, for the size of the bulb, you sure lose alot to the core – not cost effective as far as I’m concerned! I’m all about bang for my buck AND taste buds. Sorry fennel, you just didn’t make the cut.
I did have a piece of Caramel Apple Bread with a wee smear of peanut butter before heading to boot camp, but it wouldn’t play nice with my camera, and all my photos were blurry. Lame. Then after dinner I was feeling on the munchy side, so I had about half a mug (not those oversize mugs I have, but a regular tea mug) with some Nature’s Path Heritage Bites and milk. But I think I’m done now – which is good, because it’s time to watch the news, then get to bed.

Fennell is yucky, but I must say I like it slightly better than when I was a kid and Mom made me eat it! Back then she would tell me to chew real fast and pretend it was bubble gum! Don’t know what she was thinking with that one but it did not work! Ugh…the memories! Kudos to you for giving a new veg a go!!!!! 😉
I’ve never had fennel but if it tastes like licorice, I think I’ll be passing! Thanks for the heads up!!
I haven’t gone biking in far too long. My dad and I always used to go when we lived in Minnesota because there were trails everywhere. I miss it! Glad you enjoyed yourself.
I’m not sure if I’ve ever had fennel. I can’t stand black licorice, so I think I would have noticed 🙂 Kudos to you for trying something new! Too bad it didn’t make the cut for next time.
Blech, fennel. I’m not a fan either. I tried it once cooked on kabobs and my fiance and I both cringed and picked all the fennel off. He still won’t let me live that one down.
Great info about the fennel, I’m going to try some soon, as I hear it’s delicious!
