Almost A Summer Evening

You could have mistaken it for a summer’s evening, if it weren’t for the wind coming off the water that made it REALLY COLD once the sun went down! Only a month or so away though til real summer!

I managed to throw together a pretty good dinner in a very short amount of time, so I’d be able to head out the door on time. It helped that I had some leftovers in the fridge of course 😉

It started with a grilled salmon burger, with some avocado/Laughing Cow smash spread on top.

A piece of leftover roasted acorn squash, with a little butter & pepper.

Fresh cucumber slices, to add some crunch and green to the plate.

And the rest of the leftover potato/onion/fennel. I actually picked around all the fennel though when I ate it 😳

Don’t worry, there was still room for the ever important ice cream I was heading out for!

I met up with my friend at his place, and we walked through Beacon Hill Park to the Beacon Drive In. I so wish I’d had my camera – the lighting was that great sun low in the sky deal, and there were tons of purple wildflowers out in the park. Perhaps I’ll have to take a trip back this weekend, just to play photojournalist. This was the first time I’d been to the drive in, which is apparently a Victoria institution. Sad that in the 4 years I’ve been here, I’ve only just gotten around to visiting it. I ordered a hot fudge sundae upon my friend’s recommendation. It was tasty, but I was expecting something a little larger for the $4.25 that I paid. It’s not like I needed more.

We got out ice cream, then walked through the park some more, past the petting zoo and all the noisy peacocks, then down along the water. We ended up wandering through Cook Street Village, then stopped at Moka House for awhile, so he could have some tea, while I just had water (ice cream makes you thirsty). We sat outside, although, it was pretty windy. Plus there was a group of bikers out there, and when they took off on their bikes, it was rather loud. Eh, what ya gonna do?

We walked back to my friend’s place and parted ways. I headed back home, and broke into the Dr Mario for far too long this evening. There may have also been a little popcorn consumed – I wanted something crunchy. Now it’s way past my bedtime, and I have a million things I want to do (including baking!), so I should get myself to bed. Night!

    Did you mash avocado into your laughing cow cheese? Or do they have an avocado product? It seems like so many people are into the laughing cow, I might have to start buying somE! That burger looks so delicious.
