Cascades Of Dinner

I got a little artistic with my food this evening, just for the camera 😉 Okay, it’s not really that artistic, but I was still being deliberate with my placement of items for your enjoyment.

I rescued a garlic portabella mushroom burger from the depths of my freezer, and grilled it up on good ol’ Foreman. Then I topped it with a little shredded cheddar, salsa, and sour cream.

Then it was time to revamp some leftovers in the fridge. I heated up the other half of my mini acorn squash, as well as a little brown basmati rice. Then I mixed in some frozen corn & peas, along with some seasoning and butter, and stuffed that into the squash.

And that my friends, was dinner! Can’t get much simpler, can you?

I think the squash waterfall looked better than the salsa/sour cream one. But it all tasted good, and really, that’s what counts right?

There was some definite blog reading this evening, as well as some tv watching. I got a little stir crazy, and did a little bit of ab work until it bothered my neck. I took that as a sign to play Dr Mario. Because obviously, I needed a sign for that. Riiiight. All that video gaming required fuel! One of my coworkers gave me a Ranger Cookie at work today, but due to my behemoth sandwich at lunch, there was definitely no room for it. So I saved it for dessert with a couple small scoops of So Delicious Coconut Milk Ice Cream – chocolate & coconut flavours.

Now, from what I understand, Ranger Cookies contain coconut (hence why I had to take one), cornflakes, and…? I think this one had some nuts in it. Have you ever had them, or made them? Any tried & true recipes out there? I know, I know, I could just search online, but it’s always better to get some recommendations.

Well, me and my sore neck should probably be hitting the sack – I’ll have to make sure my pillows are set up well so as not to aggravate it anymore. Nighty night!

    LOVE the gorgeous pics today. Seriously drool-worthy stuff!

    I haven’t tried making Ranger Cookies yet, but I’ve really wanted to!! Cookie Madness is always one of my best go-to sources. The recipe she used is here:

    Cornflakes, coconut, and all! Yum yum. I hope you try it so I can hear how they turn out. 😉

    Garlic portabello mushroom burger looks amazing. I love finally using things from my freezer, as long as they aren’t freezer burnt!! Have a great one.

    What an awesome dinner! I love the picture with the cascading rice. Dessert looks delicious–I’ve never heard of Ranger cookies!
