Just One Of Those Days

I’m having a bit of an off day today, so I’ll apologize now if I’m Debbie Downer. I think it’s some sort of “OMG, I’m turning 30, what have I done with my life” crisis thing. Either that, or I’m all hormonal. Either way, it’s putting me in a mood. One of those moods where all I want to do is curl up on the couch and lay like a lump for the rest of the evening, and have no real desire to eat anything in particular. Le sigh.

But I did eat, so I’ll share with you my eats. They were good 😀

Breakfast was a quick one, since I was in a mega-rush this morning to get out the door. No shock to see a bowl of cereal.

I mixed together some Kashi GoLean Crunch, Cinnamon Puffins, and Nature’s Path Heritage Bites, and drowned them in some unsweetened vanilla almond milk. Mmmm.

I was on the ball last night, and cooked up something new for lunch today. A long while back, I received a copy of the PETA Vegan College Cookbook to review. I know, everyone and their dog has already posted their reviews, and I’m totally behind the times. But I seriously only finished reading it like, 2 days ago. I tend to start something, then get distracted by something else, and forget about it. Oops! But, I did take the opportunity to try out a recipe for my lunch today.

I whipped up (or should I say whizzed up, seeing as I used my immersion blender) a pot full of Haas Party Avocado Soup. The recipe as written is really basic, and involves the microwave. I’m too high brow to make a soup from scratch in the microwave, so I made it on the stove, and added more seasonings – the original only called for lime juice, salt & pepper, but I added onion & garlic powder, and some ancho chili powder. This made one thick, creamy, delicious pot of pale green soup. I bet you could make it more of a meal by adding some corn, black beans, chicken, salsa, sour cream, etc. But it’s quite nice as is.

I brought a serving with me to work.

I popped some popcorn last night as well to eat with the soup – we always got popcorn with our meals in Ecuador, and this just seemed like the kind of soup it would work with 🙂 To round out the meal, I had some leftover rice/corn/peas, a gala apple, and a few cashews.

I loved adding the popcorn directly to the soup – it was very tasty 🙂

As for a review of the cookbook – perhaps I’ll save that for a later time. I probably don’t have much else to add to what everyone else has said, and since I’m not in the best of moods, it might “cloud” my review. Instead, I shall leave you to go rummage through my kitchen in search of dinner. Later!

    Sorry to hear you’re feeling blah. I hope it passes soon.

    But, really, how can you be down on yourself when you are the creator of the revered, the almighty, the save-any-sandwich-from mediocrity, laughing cow/avocado smash??? 😉

    we are all in a funk every couple of days!! i felt awful and lonely and blahhhhhh on Monday! I’m hoping your poopy mood passes ASAP!

    that avocado soup sounds yummyyyyyyy! funny how it looks like 2 completely diff colors/foods in the diff pictures!

    I get poopy every once in a while too… usually has something to do with the whole hormone thing. HUGS!

    That soup looks pretty good. Never thought of adding popcorn to soup, but it does sound like it would work!

    As for the crappy mood….we all get them sometimes! I certainly didn’t detect any grumpiness in your post! 😉
