Skipping Class

Well, okay, I’m not really in classes right now. But technically, I’m supposed to be at a “team building” breakfast for work. As evidenced by me posting my breakfast at home, I am obviously not there. I have already expressed my dislike of going out for breakfast (hello menu full of eggs), and really have no desire to get up extra early to meet for a meal I don’t want to eat out. You want to do team building? Do lunch during work hours. Perhaps I’m just not a team player 😉

I also didn’t actually get out of bed until oh, about 10 min before they were to be meeting anyways. I did not have a good sleep. Just as I was laying in bed, falling asleep, I hear horrendous noises coming from my fridge. I then spent the next hour or so paranoid that my fridge is going to die in the middle of the night, and I will frantically have to find new homes for everything in it in the morning. Well, it appears to still be working, but I question for how long. At least it stopped making weird noises.

Obviously breakfast needed to be something out of the fridge, to avoid maximum food loss should it die. And it should compete with the breakfast I’m skipping (which probably would have been French Toast). I had the perfect solution!

Baked French Toast! Take that boring diner French Toast (and actually, we’ve been there before for work breakfast, and I didn’t like their French Toast). Mine is way fancier, and enjoyed in the sunshine 🙂

I had 2 slices, along with a glass of Happy Planet Mango Peach Party.

Like I said, I’m pretty sure I can make myself a better breakfast than any ol’ restaurant would. I’m all for eating out for lunch or dinner, but home cooked is always the way to go in my mind for breakfast.

Now I should go rescue some more items from my fridge, just in case. Have a great Friday everyone!

    We used to go out for b-fast quite a bit on weekends a few years ago but have gotten away from it. I used to enjoy a big ole Belgian waffle, but now I just like my oats!

    Holy hannah that looks good. Gotta recipe to share sweets?

    I do like going out for eggwhite omelettes every now and then b/c I suck at making omelettes.
