Falafel-ly Good

This weekend has just flown by! I hate that – I want to chill and enjoy my weekend, because the work week is just too long and hectic. I guess having 8+ hours of your Saturday devoted to a First Aid course didn’t help anything (I passed by the way – not that I had any doubt). I was at the course from 8:30 am to 5 pm on Saturday, then hit up the health food store because it was on the way home. I was actually looking for something to take over to my friend’s place to throw on the grill, but was in one of those moods where I had no clue what I wanted to eat. Instead I grabbed a couple of impulse purchases (check out my New Food Spotlight), and got home just after 5:30 pm. I was completely exhausted, so I plopped myself on the couch, and napped for an hour. I got up, stood in front of the fridge, realized I had nothing to grill, and said screw it, and went over to the bbq anyways. This whole stomach pain thing is starting to wreck havoc on my hunger signals. I think I ate crackers & roasted red pepper hummus for dinner, accompanied by a couple gin & tonics. Well balanced, I know 😉

Needless to say, I totally took the opportunity to sleep in this morning. Then I blended up some breakfast tofudding. Mmmm.

  • 1 frozen banana
  • 1/3 block Mori-Nu Firm Silken Tofu
  • 1 tbsp cocoa powder
  • 1 tbsp peanut butter
  • splash of unsweetened vanilla almond milk
  • 1 scoop vanilla whey protein powder

I also had one lonely piece of Honey Wheat Berry bread in the fridge, so I toasted that up, and spread half with lemon curd; the other half with Golden Lane Saskatoon Berry Creamed Honey.

It’s true, I switched up the juice. Cranberry juice was on sale this week, and I haven’t had it in ages, so why not? Don’t worry, the Mango Peach Party won’t be gone forever.

After I was properly fuelled, I got my grocery shopping on. So wrong to do it on a Sunday – Saturday is my grocery shopping day damnit! Oh well, I hit up the sales, got some new stuff, and have a stocked fridge again. Phew!

Then I took a wander downtown, to enjoy the sunshine and get in some exercise. Alot of people think I’m crazy walking downtown from my house, but really, it’s not that far. And when it’s a nice day out, why not kill two birds with one stone? I was on a scouting mission for my sister’s birthday present, as well as pricing out some books I want to buy. I always like to check their price in store (and thumb through them to make sure I really want them), then come home and see if I can order them cheaper online, especially if I have to pay for shipping. Too bad I still have no clue what to get my sister for her birthday – she never knows what she wants. What do you get a 27 year old who still lives at home, therefore not needing all the house things that would make gift giving way easier?!

Once I made my way home, it was time to grill up some lunch.

In my Multigrain Flatout Wrap we have Holy Homous Red Pepper Hummus, sliced avocado, deli BBQ chicken, and some mozzarella cheese. I was going to use goat cheese, but when I took it out of the fridge, it was smelling a little funky in a bad way.

I also grabbed a few lychees.

Throw a couple dill pickles on the plate, pair with a glass of Diet Coke, some new reading material, and your connection to the digital world, and you are set to sit outside and watch your fur baby explore the great outdoors 😎

It was a pretty amazing wrap if I do say so myself. In fact, I’m patting myself on the back as I type. How’s that for skill? 😉

I’m not even really sure how the rest of my evening went. There was some Dr Mario, some dishes, some laundry, some talking on the phone, and blog reading. Then there was dinner.

Seeing as everyone and their dog is devouring the falafel, I wanted to be like the cool kids too. Good thing I had a box of falafel mix hiding in my cupboard! I pan fried up some patties, and made a big ol’ falafel salad with red leaf lettuce, carrot, cucumber, sweet walla walla onion, and tzatziki.

As you can see, I also made my own pita chips out of a whole wheat pita – 7 min in the oven at 350 F and you have lovely, crispy pitas.

Dinner was falafel-ly good. I know, that was lame. I’m okay with it.

Then I wasted some more time, did some abs, and needed a snack. Insert Krista’s Banana Rhubarb Muffin with a little Peanut Butter & Co. White Chocolate Wonderful.

I knew the muffin would rock with a little pb lovin’. But really, what isn’t made better with a little pb? Exactly.

And now, the weekend is almost over. Boo. Guess that means I should finish watching the news, then make my way to bed. Hope you all enjoyed your weekend! Night 🙂

    Sounds like a fun BBQ to me 😉

    I’m no good with birthday gift ideas, but I know that something that’s always on my list is iTunes $$. I love to buy songs and stuff, but it gets expensive!

    I’m loving the wrap! It looks amazing!! I’m feeling out of the falafel loop! That should probably change because your dinner sounds delicious 🙂

    Hmm…birthday gift? Gift cards are always nice and you can pick from so many different things (book store, clothing store, iTunes, mani/pedi, etc.).

    Maybe you could find something there? They have some unique fun things

    I love it that you play Dr. Mario, so funny. That tofudding looks/sounds AMAZING! I never thought about adding protein powder and banana with PB, I’ll have to try that. The falafal (spelling…bad) looks delicious too, yum!
