I had a lovely bike ride this evening along the Galloping Goose Trail. I spent just over an hour outside, enjoying the sunshine, getting my ride on. It was actually alot warmer out than I thought it would be, especially when I wasn’t along the water. I spent a good part of my ride avoiding all the little caterpillars on the path – it’s hard to do when you are trying to avoid oncoming pedestrians and cyclists! I should have brought my camera – lots of pretty wildflowers out in bloom, and great lighting for photos to boot!

Since I planned my ride to happen during prime dinner eating/digesting time, I switched up my eats this evening. I had a bowl of frosty tofudding before my bike ride.

I blended up the following:

  • 1/3 block Mori-Nu Firm Silken Tofu
  • 1 frozen banana
  • frozen mango
  • splash of milk
  • splash of coconut extract
  • shredded coconut
  • drizzle of agave

Then I topped my frozen treat with a little Kingslake & Crane Mahalo Mix Granola and more shredded coconut, and basked in the sun while I enjoyed it thoroughly 🙂

My dinner didn’t actually end up being eaten until after 9 pm. Oops! That’s what happens when you decide to bake a sweet potato in the oven, all proper like, instead of in the microwave. I must say though, it’s totally worth it – so much better.

What did I do with that sweet potato? Stuffed it!

I mixed up some black beans, corn, onion, and salsa, heated it in the microwave, and threw that into my sweet potato. Then I added a few jalapeno slices, and shredded mozzarella. Mmmm, melty cheese.

I also steamed up some fresh green beans, and served them up with a little butter, pepper, and onion powder.

Try as I might, I didn’t quite finish all my sweet potato & stuffing goodness, but there wasn’t enough worth saving. I’m pretty sure I’ve eaten my weight in fibre today, and yet, don’t feel uncomfortable in any way. Well, that’s not true – I don’t know that the jalapenos were a good idea with my current mystery stomach pain, but I like living dangerously 😉

Now me and my fibre-filled tummy need to hit the sack – I have a busy day tomorrow. Night!

    That tofudding looks so good! And I know–even though it takes FOREVER to make stuff in the oven vs the microwave, it always tastes so much better. Your dinner looks awesome!

    i love sweet potatoes so much! i always bake them in the oven. they turn out so wonderfully that way. your frosty tofudding sounds incredible! and of course it looks pretty, too. 🙂
