Mumbo Jumbo Gumbo

Well, it’s been another full day here. Weekends are so not long enough! I’m sure I say that all the time, but it’s true. I think we should make a 4 day work week standard, with 3 day weekend. Who’s with me on this? 😀

I took a trip downtown to pick up a couple of things for my sister’s birthday present, and made a little detour into one of the Apple dealers. It was fun to play around with the MacBooks they had on site, as I haven’t touched a Mac in years! They are a very slick little computer. And they did have some good deals on the ones they have in stock, as the new ones will be coming out in a week or so, but not good enough that I was whipping out the credit card and walking away with a present. Still doing my laptop research!

I may have also picked up some So Delicious Coconut Milk Ice Cream while I was downtown. What? It was on sale! You can’t pass up when the good stuff is on sale 😉

Once I got home, it was lunch time. I went with a giant salad and Rice Works Sea Salt Rice Crisps.

The salad included red leaf lettuce, coleslaw mix, green onion, and cucumber. I made up my own dressing of balsamic vinegar, olive oil, dijon mustard, salt, and pepper. Then I topped it with a little of my BBQ’d Spring Salmon. Yum!

It was almost too much. Rarely do I find myself feeling overly full on salad.

After some digestion time, I was off to the gym. I did 35 min on the elliptical, then some upper body strength training. I think they haven’t turned on the AC in the gym yet, because it was again, stupidly hot in there. Hello, we had a heat wave last week of 30+ C, and it’s been consistently above 20 since then. Time to cool that place down. It makes it really uncomfortable to work out when it’s that warm. I don’t do heat well.

Dinner was something I haven’t made in forever! I was looking through my cupboards to see what needs to get eaten up, and saw two cans of smoked oysters. Mmmm. Those things are like candy. I remembered that I had bought them to make this Chicken & Smoked Oyster Gumbo that I had made once, ages (years?) ago. So that’s what I whipped up this evening!

The recipe comes from The GI Diet Cookbook by Rick Gallop. This time though, I got to make it with fresh okra! I had to used canned (gross) last time, because I hadn’t found anywhere in Victoria that sold fresh. But now that I have my awesome produce market, I have fresh stuff. Yes! I also added a carrot to the recipe, because what stew/soup shouldn’t have carrots?

Although you can’t see it, there is some brown basmati rice underneath all that gumbo goodness.

So good, and so filling. It really is more of a stew than soup. And a good way for me to actually eat a few tomatoes – soup/stew is one of the few acceptable uses in my books.

What else did I do this evening? Hmmm. I cleaned out the freezer. and organized it so I actually have an idea of what’s in there. I also did dishes and cleaned the bathroom. Since I was such a good girl and accomplished my chores, I got to have dessert!

The end of a jar of applesauce, heated in the microwave with some cinnamon and flax seed. The topped with raisins, maple syrup, and these amazing pecans coated in crack maple sugar that Krista had sent me. Oh man, so hard to not devour the entire package, because they are divine.

And that, my friends, brings the weekend to a close. Time to watch the late news, then get some shut eye. Night!

    I have said for years now that I’d rather work 4 longer days and have 3 day weekends than the way it is now! I totally have a coconut milk ice cream problem 🙂

    That dessert is pure genius. Sounds delicious!! Gotta love fresh produce!

    I’m with you on the three day weekend! In fact, when I was in school I thought there should be 5 day weekends and 2 day work weeks but I think that was a little too ambitious.

    That ice cream always sounds so good! What a great deal that you found it on sale. I don’t think I could pass it up given a good deal.

    Yum, that gumbo looks super yummy. I just made a vegan version a week or two ago–it makes me look at okra in a whole new way;)
