I’m A Freakin’ Wreck!

So, to go along with my stomach issues and weird bumps/rash/hives (which, is all over my upper back now as well), I now have a painful knot in between my shoulder blades that makes me want to cry, and then I smoked myself in the jaw with the cupboard door and have a bruise forming. Did I mention I broke a dish and my necklace last week? Yeah, this can stop, um, NOW!

Okay, enough whining & complaining. Onto the food!

Since my yogurt at lunch yesterday was so tasty, I thought I’d reprise it for breakfast this morning.

I put way too much yogurt into a bowl (I wanted to finish off the container), then topped it with crunchy peanut butter, my aunt’s homemade grape jelly, flax seed, and Bear Naked Vanilla Almond Granola (I found it hiding in the back of my cupboard).

I was definitely on the verge of not being able to finish this. Not because it was too much food, but because it was too much yogurt in one sitting. But I’m stubborn, and I made it through. Can’t waste perfectly good food!

Lunch has no pictures. We were having a BBQ at work today to raise funds for the Canary Derby. What is this Canary Derby, you may ask? Well, it’s an event put on to raise funds for the BC Cancer Foundation. Various technology-based businesses build gravity racers and then race them down a course. The whole day is quite fun – entertainment, lots of races, beer garden, BBQ. Our company actually designed the timing system that they use on the track 🙂 And our racer tends to place quite high every year, although we haven’t won…yet.

And you know, not having pictures of my lunch is no big loss. I had a sad burger with cheese, mustard, and ketchup, and a little iceberg lettuce. I think a few grapes, a piece of honeydew, and some baby carrots made their way onto my plate as well. I kinda thought there would have been some salads, or more fruit/veg available, but alas, it was a pretty bare bones BBQ. There was carrot cake though, to celebrate the April, May, and June birthdays at work.

After work, I went for a walk up to the store to pick up a couple of essentials, since there was no real grocery shopping this weekend. Then it was time to create dinner.

I started with a salmon burger, grilled up on the Foreman, and topped with some avocado/Laughing Cow smash.

I cooked up some Israeli couscous that I picked up at Whole Foods on the weekend. I used chicken stock to cook it, and added some extra parsley, garlic, onion, pepper, and a little butter.

And some steamed carrots & green beans.

For no grocery shop this weekend, I think I came up with a pretty good dinner!

The Israeli couscous is interesting. I don’t think I cooked it quite long enough though, as some of the larger ones were still a little undercooked in the centre. But it was fun to try as a different side dish. Too bad it doesn’t seem to come in whole wheat though – has anyone seen that?

I spent the evening catching up on blog reading, doing dishes & laundry, and doing a little ab work, since I’ve been pretty slack in the whole exercise department lately. I’ve also been trying to stretch out and work out the knot between my shoulders, because it makes typing insanely painful – aka, it hurts like a bitch at work! So far, I haven’t been successful. I think I’m going to try out some heating pad action next.

Eventually I had a hankerin’ for some dessert. I went with some Stash Creme Caramel tea with a little milk & agave, and my Pumpkin Pie cookie from last night.

I heated the cookie a little in the microwave and the maple frosting got all melty 🙂 Yum!

Well, I think it’s time to watch the news and then read for a bit before bed. I’m slowly working my way through all the recipes in ED&BV, and I’ve been flagging quite a few to try 🙂 Night!

    You dinner looks absolutely amazing–from the burger to the beans and couscous (butter makes everything better–even busted jaws and cranky tummies).

    Hmm..the Israeli couscous looks interesting. I’ve never heard of it but it just looks like oversized couscous, am I wrong?

    I really have to try the avocado/laughing cow mash. I was thinking it would be great in a deviled egg! Wierd? I’m going to test it one of these days. On a salmon burger is a great idea too, I bet it was very tasty.

    That dinner is off the hook! I’ve never seen WW Israeli couscous either, but I do enjoy it as a side and in stews!

    Hope that knot worked itself out. Have you tried rolling around on a tennis ball to break it up?
