Chicken Or Chickpeas?

I had every intention of eating the black beans I knew I had in my fridge. But when I opened the container, it didn’t smell so good. And I’m pretty sure there shouldn’t be white spots on the beans. So I tossed those. And stood in front of the cupboards & freezer deciding what I would use to replace the black beans. Chicken or chickpeas? I was too impatient to defrost the chicken, so chickpeas it was!

And what was I creating with said chickpeas? Burritos!

Okay, so technically I only made one, because well, it’s only me here, and I only had one wrap left. I semi-mashed some chickpeas, then mixed them with some leftover brown basmati rice, corn, green onion, salsa, and jalapenos. I heated the filling in the microwave, then added it to the wrap with some smashed avocado and shredded cheddar & mozzarella. I wrapped it up burrito style as best I could, considering I was using a Flatout Wrap, and threw it on the Foreman to get all heated up. I made a little bit too much filling, so I just ate that on the side.

Oh yeah. Cheese porn. Gotta love it 😉

I decided to bust out the ol’ Wii Fit this evening, and went through all the yoga poses on there, then did some abs. And tried yet again to work out the knot of death between my shoulders with the tennis ball. I’m not having luck with this – tips on how this is supposed to work? Because so far, it mostly just hurts like an SOB!

There was also some Dr Mario thrown in there, because well, if I’m going to turn on the Wii, may as well get my Mario fix. Then it was snack time 🙂

Plain non-fat yogurt topped with lemon curd, raspberry jam, hemp seeds, and shredded coconut. Lemon + raspberry = excellent flavour combo.

I don’t know if you can tell, but I’m scraping bare bottom with the food in my fridge. Fortunately, tomorrow is payday Friday, which means Saturday can be super shopping Saturday! And boy do I have some food plans for the weekend & next week 🙂

    Oh I LOVE payday! I have to wait another five days 😦 The chickpea burrito was a fantastic idea, it looks so good. I love the flatout wraps because they allow for so much yumminess to go into the wrap, and they are so high in fiber!

    For digging in the bottom of your fridge, that burrito concoction looks absolutely mouthwatering and sounds like something I can actually make with stuff I already have.

    I’m always looking for new ways to show love to my little chickpea, so I will have to buck up and try that in the near future!
