Blueberries ‘N Cream

It’s the weekend, and oats were on the menu this morning. Seems like it’s the only time I have to actually spend more than 45 seconds making breakfast these days. After some freezer consultation, it was decided that blueberries would be the star of the show. I give to you Blueberries ‘N Cream oatmeal.

  • 1/2 cup oats, milk, water
  • ~1/3 cup frozen blueberries
  • splash of coconut extract
  • 1 tbsp flax seed
  • Peanut Butter & Co. White Chocolate Wonderful
  • Trader Joe’s Mini Vanilla Meringues
  • shredded coconut

I found those meringues hanging out in the back of my cupboard from when my friend visited Phoenix this past October! I figure I should start using them up – oats seemed like the appropriate place.

Mmm, mmm, good! Blueberries make for the best coloured oats ever! Seriously, you ain’t getting that colour with any other fruit, that’s for sure.

Now I’m fuelled up and ready to hit up the grocery store. See ya later!

    Blueberry is likely my favorite smoothie flavor (or one of them!), so I must try this oatmeal combo ASAP!
