A Fruity Start

Seeing as I have a vast array of fresh fruit in my fridge (purchased to make my dessert pizza yesterday), I knew that was going to figure heavily into my breakfast this morning. Actually, I had a bunch of fruit I had washed & prepped for the pizza that I didn’t need, so I threw in all together and made a fruit salad for later use – like breakfast!

I soaked 1/2 a cup of muesli mix last night in milk, then added some yogurt, Ruth’s Chia Goodness cereal, coconut, coconut extract, and most of the fruit salad. I saved a little to top the bowl with, to make it pretty for y’all.

And because there obviously wasn’t quite enough fruit there, I also had a glass of Happy Planet Mango Peach Party.

What a great way to start my Sunday morning. And perfect fuel for all the things on my agenda today. First, I’m off to the Organic Islands Festival, then my friend told me about a Strawberry Festival where they are serving up strawberries & ice cream for 50 cents! I’ll be heading over there afterwards for sure 🙂 I also need to get in some deep cleaning in my suite, as my mom is coming for a visit later on this week.

Well, I better get going!

    That breakfast looks so tasty and the pizza is gorgeous! Your day of fests sounds wonderful. Hope you had a great time and filled up on strawberries!
