Take That Swiftsure!

Remember my less than impressive salad from last night? Well, it left me craving a decent dinner salad, so that’s what was on the menu tonight!

I knew I didn’t want any of the salad dressings left in my fridge, so I grabbed a few things, and made my own creamy ranch style dressing.

I stirred together plain non-fat yogurt, low-fat sour cream, dijon mustard, salt, pepper, dill, chives, onion, and garlic powder. It turned out pretty good for on-the-fly dressing making!

Then it was time to build the salad. I went with a seafood theme, similar to last night, but mine was definitely kicked up multiple notches.

I started with a bed of red leaf lettuce tossed in my homemade dressing, then topped it with a grilled salmon burger, corn, peas, sheep’s milk feta (the best!), and a drizzle of the remaining dressing.

Although not really the same flavour profile as the salad last night, infinitely more satisfying. And that bad boy used less than $12 worth of ingredients for sure!

Eventually I made my way to the gym for some quality time with the stairclimber and a Rolling Stone magazine. I also found some time to watch the finale of Canada’s Next Top Model (my fave won! Woot!). That obviously lead into evening snack time.

A sliced up granny smith apple with Peanut Butter & Co. Cinnamon Raisin Swirl for dipping fun. Definitely a combination that never gets old.

I have plans to bike to work tomorrow, so I think I should get myself into bed. Night everyone!

    Your salad looks worthy of the $12 price tag! I love that ranch recipe! I haven’t had ranch dressing in ages.
