Getting It Done

Guess who completely lucked out this afternoon? That would be me 😀 The class I needed magically had some open spots, so now I’m registered in all 5 classes I need to get. Woohoo! Three of those classes are actually worth 6 credits instead of 3 like most classes, so it’s more like I’m taking 8 classes (4 each semester). I feel much better about the whole thing now. No begging required.

I’ve had a pretty laid back day – I spent some time at the gym, walked to a few errands, cleaned, got creative in the kitchen, and booked carpet cleaning for when I move. I also ate lunch in there somewhere.

I went exploring in the freezer, and decided upon some of my Grandpa’s Borscht, topped with sour cream & dill.

Alongside the soup, you will find a toasted cheddar herb bun from the Old Country Market, with red pepper jelly & mozzarella.

It turned out to be a great little lunch.

I wish I could make & plate up lunches like this every day. Alas, it’s a bit hard to do so at work.

I also don’t get the chance to have a little tea cup full of ice cream after lunch when I’m at work – perfect on a hot day like today.

That would be Purdy’s Hedgehog ice cream, if you are curious.

Then at some point in the afternoon, I broke out this fancy soda I picked up at The Old Country Market in Coombs on the weekend as well.

I love a good Vanilla Creme soda, and this one delivered for sure! None of that fluorescent pink pseudo cream soda for this gal – give me the good stuff!

That’s all for now – you’ll have to come back to see what new treats I created in the kitchen today. I’m such a tease 😉

    Congrats on getting into that course!!!

    Great lunch you had. I feel the same way about wishing I could plate up a great lunch everyday. Too bad work gets in the way. 😉
