Keen For Green

Dinner ended up being unintentionally green, to go along with my very green lunch. But it was intentionally delicious

I knew I had leftover steamed vegetables from Sunday night, so I wanted to use them up with dinner. I decided that pasta was the way to go.

There was a box with about 1 serving of spinach fettuccine in the cupboard, and to stay with the “clean out the fridge & cupboards” theme we’ve seen lately, I figured why not finish off another box?

I cooked up the pasta, tossed it with some butter, garlic, onion powder, and pepper, then topped it with the steamed veggies and a little sharp white cheddar. Pasta perfection!

It looks like more pasta than it really is – I spread it out like a nest so you could see it under all those veggies. I’m a sneaky one! It totally hit the spot. I love when dinners do that. I’m not a huge pasta person, but toss it with some butter, seasonings, and add veggies, and I’ll chow down for sure!

Obviously, I had to wait a little while to head off to the gym – you don’t want to be sweating it up with a pasta food baby. That’s just asking for trouble. Eventually I ended up there, kickin’ it with the elliptical and some upper body strength work. I’m taking a break from using the stairclimber for awhile, to see if it helps out on my knee pain issues.

All that ellipticizing made me a little peckish. Which was perfect, because I had a great idea for dessert

Oh yeah – I topped an ED&BV “Nicer” Krispy Square with a small scoop of So Delicious Coconut Milk Vanilla ice cream, and served it up with fresh raspberries and Saskatoon berries.

Okay, so the plating was really all for show. The krispy square is a little to hard to eat with a fork or spoon, so I ate the ice cream & berries, then the square, which had accumulated a little melted ice cream icing layer. Hells yeah!

And now I have my evening post done up before the late night news is even on. I’m so on top of things, it’s scary. In keeping up with that trend, I’m off to do the dishes. Night

    Very well done with the dessert plating! I love spinach fettuccine and could eat it every single day. Yours looks so delightful with all those veggies on there!
