Light Show

Hello there wonderful readers! How’s it all going? I would have posted last night, but we had one wicked lightning storm going on, and I thought it would be better if I stayed off the computer. It was actually quite spectacular to watch though – I was driving home from a friend’s place, and the sky was the most amazing colours – it was raining where I was headed, yet the sun was setting behind me, so I was driving directly towards a beautiful rainbow, and watching the lightning flash across the sky. I even saw some fork lightning, and that is rare for his area. I wish I had gotten some pictures, but I figured it was safer to just focus on driving.

Shall we go back to yesterday?

I was a shopping machine yesterday. I hit up the produce market, and low and behold – local BC corn! FINALLY! I was pretty excited, and definitely scooped up a few ears. Expect to see some for lunch later today. I also went clothes shopping at the mall. There were some pretty great sales going on. I scored a pair of cargo capris and two shirts for under $60.

All that shopping worked up an appetite, so I whipped up a quick grilled sammy – roasted red pepper hummus, sharp white cheddar, and dill pickles on Silver Hills “The Big 16” bread.

Then I scrambled to get showered, dressed, and face on to head out to my friend’s place for a BBQ. I was in charge of – you guessed it – dessert. I always seem to get that job, but I’m not complaining. I love any excuse to bake! What did I make you ask?

To-Die-For Cranberry Coconut Bars from the cookbook One Smart Cookie by Julie Van Rosendaal. I’ve made these many a time for work functions, and they always get rave reviews. On a shortbread-like crust sits a filling of cranberries and coconut in a lemony custard. They are a great blend of sweet and sour – perfect for someone like myself who loves sour.

As I broke my square baking pan a little while back, I had no choice but to make a double batch in my lasagne pan. So now I have half the pan left – I’ll probably take it into work this week, because it’s not like I need to eat them all.

The BBQ was good – it was nice to see my friend again. She used to work with me, but went on maternity leave and is now not coming back to work (although, I won’t be there anyways, so it doesn’t really matter). We used to share an office, and get along really well – very similar tastes, styles, and views. We also both graduated from the same university and lived in Australia for a period of time. It was going to be the last chance for me to see her before I move back home, as she lives a ways out of Victoria. We had BBQ burgers – both beef and portabella mushroom – with homemade buns, tortilla chips and salsa, spanakopita, and a zucchini salad that another coworker made. This was my first time trying a raw zucchini salad (the same thing as the blog-famous raw zucchini pasta, but dressed like a salad instead of tomato sauce). And you know, I actually quite enjoyed it. I tend to be wary about raw vegetables – I usually find them too bitter for my palate. But I think after sitting in the dressing, the zucchini softened up and absorbed those flavours. I might even have to try making one myself!

It was a relatively early night, as the children had to go to bed, so when I got home, I decided to get on cleaning up the house, doing laundry, playing Wii, and packing a few boxes with more books. Then it was off to bed to do some reading.

This morning I decided on kamut flakes for breakfast, as it’s Sunday, and I have the time to make them. Since I now have some frozen cranberries from baking the squares, I decided to go with apple cranberry kamut flakes.

  • 1/2 cup kamut flakes, water, milk
  • 1/2 granny smith apple, chopped
  • cranberries
  • splash of vanilla
  • flax seed
  • dark brown sugar
  • chunky peanut butter
  • hemp seeds

Well, time to get off this computer and take on the day! Lots that I should accomplish, as always.

    Lovely sandwich and the squares? Oh, my! How good are those puppies? 🙂

    We are getting thunder boomers on and off all day today…..lots of lightening, too.
