Where’s The AC?!

Apparently at the gym – thank goodness for that!

It’s still hot. I would peg it somewhere around 25 C right now, which is ridiculous for night time here. Did I mention it’s also on the humid side? I can feel it inside – it’s icky. I know, I know, I’m such a complainer. But seriously, I am not a hot weather kinda gal. I’ll be glad when this heat wave is over…if only we knew when that might be!

I tried my best to avoid heating up my suite while making dinner, and did a pretty good job.

It started with a salad – red leaf lettuce tossed with the last of some light caesar dressing (another jar bites the dust!), topped with a few feta & spinach turkey meatballs.

I was feeling something more than just water with dinner, so I tried out this R.W. Knudsen Light Boysenberry Spritzer. They were on sale for $0.98 each – obviously a sign I should try them out.

It was a good accompaniment with dinner on a hot summer evening. Can’t go wrong with something made from carbonated water & fruit juices. I liked the boysenberry flavour, but I think something more citrusy would be even more refreshing. Good thing I picked up a tangerine one as well.

I decided to go the gym, not sure if their AC was going to be up to par or not. Luckily, it was nice and cool in there. I think everyone had the same idea as me though, to hit up the gym later on this evening, because it was much busier than I’ve seen it at 8:30 on a Tuesday night. No matter, I still got in my elliptical & strength training time, without passing out from excessive heat. It’s almost incentive to hang out at the gym now, just for the AC.

I wanted something cool and creamy for a snack when I got back. Although I could have just grabbed a scoop of ice cream, I decided it was time I dove in and tried the blog world sensation. Yes…I made Gena’s Banana Soft Serve.

As I do not like bananas on their own, I decided to add some extra flavours to mine. I threw in the juice of half a lemon and a splash of coconut extract. Then it got busy with my immersion blender, which I don’t recommend using. It doesn’t make it very happy. Alas, I have no food processor. I think I will have to experiment with the Magic Bullet next time. Regardless, I created a cool and creamy treat!

Yup, it’s a keeper. The bananas really do give you that soft serve texture. Not that I doubted it was good – how could everyone and their dog like it if it wasn’t? I think I could have gone all out and added the juice from the whole lemon – it would have been like lemon sorbet. Yum! I’m pretty sure I’m going to have to try this with peanut butter, because hello? Peanut butter & banana? Yeah, that’s what I thought.

Time to go sweat read in bed until I fall asleep. Night!

    Oh the banana soft serve looks excellent! I also love th roasted red pepper hummus, that’s one of my favorite flavors of hummus (other than extra garlic!). I could help but laugh when you said that drink was on sale for a dollar, remember when soft drinks used to cost 50 cents?! I realize your was sort of a “Specialty” soft drink, but still, how times have changed!

    Complain all you want about the heat – it does a number on me too! I think it’s because I’m so used to thriving in the ‘cold weather’ if you know what I mean 😉 I’m not conditioned for heat and humidity!

    Great hot night meal! And I’m glad you enjoyed the soft serve! I was amazed at how ice cream-like it got after whipping around for a bit! I’m gonna try walnuts and maple syrup next time!
