One More Day Down

…and only 2 work days to go!

It’s so weird to go into work, knowing that the end is so close. Everyone keeps asking me if I’m excited about going back to school, and I know that deep down I am, but I find that I can’t enjoy that excitement yet until I’m truly done with work, have all my things packed up, and move back to my parents. There’s still alot to do!

I started my morning with an easy breakfast, to work on using up a few more jars from my fridge. And since I only have so much milk, I’m rationing it. So I went with toast with nut butters and jams.

The first piece of Silver Hills “The Big 16” bread was slathered with peanut butter and raspberry jam.

The other was slathered the reverse – lemon curd topped with macadamia nut butter. Consistency wise, this made more sense. Plus that mac nut butter is seriously like icing.

Served up with the last(!) of the Happy Planet Mango Peach Party. It’s true, I no longer have any of my favourite juice. I may go through withdrawl symptoms.

This was wonderful fuel for my last bike ride into work. Although I have two more days, I need to take my car in on Friday for sure, as I have a ton of things to bring home with me. And tomorrow, well, I’ll admit it – my reasons are totally related to vanity. Since it’s my going away/birthday party after work, I don’t want to be a sweaty mess at the restaurant. Sometimes, I can be such a girl 😉

Another packed lunch = more cleaning out the fridge. What did we scrounge up today?

More of that juicy watermelon. That’s the problem with watermelon – when you live alone, you end up eating that stuff for days!

And the end of a container of cottage cheese, mixed with grape jelly, and granola on the side to add in later (you don’t want soggy granola).

I don’t think I’ve every added granola to my cottage cheese before. Hello – what have I been waiting for. Crunchy, chewy, salty, and sweet – it was an awesome afternoon snack. Too bad I’m out of cottage cheese now. Doh!

One of the guys at work adjusted my bike for me before I headed home, in an attempt to help out with my knee pain. I think it made for a bit of a smoother ride, so we’ll see how that translates tomorrow morning. Of course, it meant I left way later than I wanted, and I had little time to chill before heading off to Skating Boot Camp. I did manage a quick snack – Peanut Butter Clif Z-Bar and a few dried apricots.

Then I was back on the bike and off to boot camp. It was one of those evenings where we can either bike, roller blade, or run. I always choose bike, and tonight I really had no choice, as I sent my roller blades home with my sister on the weekend.

Since it’s after 8 pm when I get home, I like to try and have a quick dinner on boot camp nights. I knew exactly what I was going to make when I walked in the door – grilled sammy.

I guess it was a bread kinda day, eh? In between two slices of that wonderful Silver Hills bread, spread roasted red pepper hummus (finished), then added black forest ham (done), roasted garlic havarti, avocado, and dill pickles. Should we get even closer to that grilled wonder?

Oh yeah. Tasted as good as it looks.

On the side I had some cucumber slices and carrots, with a little olive oil/vinegar/herb salad dressing for dipping. I found it in the fridge, and it was still good, so why not?

I also made some blueberry herbal iced tea this afternoon, and had a tall, refreshing glass alongside my dinner.

Every time I make homemade iced tea, I wonder why I don’t make it more often. It’s so simple, and so refreshing. I just brew 4 tea bags of whatever tea I’m feeling in boiled water, then added a whack of ice to fill up the pitcher. I also like to add the juice of half a lemon to the pitcher. That’s it!

I spent the rest of my evening watching So You Think You Can Dance, sorting out recycling, and prepping a little food for tomorrow. And even though it’s midnight, I think I’m going to give myself a mini-pedicure then tuck myself into bed. Night!

    i’ve been seeing macadamia nut butter everywhere lately and that picture just confirmed that i NEED to try it haha. have fun at your last few days of work!

    Your sandwich looks fab! I love grilling sandwiches and totally made a similar one that other day.

    I love home-brewed ice tea, my mom makes it all the time in the summer. Your sammie looks great, but I don’t understand what the different between a sammie and a panini is, is there one?

    If you need to get rid of watermelon, you should make some watermelon salsa with it! There are some great recipes on allrecipes.com, and they are really tasty. My favorite is the Fire and Ice Watermelon salsa.

    Ahhh you’re going to be done so soon!! I thought the mac nut butter was melty cheese at first! Those ‘fu chunks look delicious – I’m going through ‘fu withdrawals 😦
