Boxes Everywhere

I didn’t think my place could look like any more of a disaster than it did, but I was wrong. I looks like I’m building forts with all these boxes in here, and I still don’t feel like I’ve packed up THAT much stuff – mostly because I’m not tackling the kitchen until Thursday, and let’s face it, there’s alot of stuff in there.

To get my busy Sunday started off right, I made myself a very pink tofudding.

  • 1/3 block Mori-Nu Firm Silken tofu
  • 3/4 frozen banana
  • few frozen raspberries
  • splash of coconut extract
  • 1 tbsp Meadowpure Ultra SmoothOmega Flax Seed (from that sample I received recently)
  • milk
  • fresh raspberries
  • coconut
  • chocolate granola

I also defrosted an Almond Quinoa muffin to have alongside. Check out the chunks of apricot in there.

This fuelled me through a random assortment of tasks this morning…er, mostly afternoon. Yes, I slept in again. What can I say, I’m jobless, I can embrace my inner night owl to the fullest finally! It was a cloudy morning, and I thought I was going to have pass up on my hopes of a bike ride this afternoon, but fortunately, the sun came out and it was actually quite warm.

I knew if I didn’t have a little something before heading out on my bike, I was going to be famished by the time I got home, so I chowed on a little watermelon.

My bike ride was ever so enjoyable. I don’t know if I’ll have the time to head out on another one before I leave, so I was glad to get it in. When I got back, it was time for a late lunch.

As good as it tastes, I was glad to be rid of it. Something about stirfry – I love to make it, but the leftovers rarely do it for me. And I’m a total leftover person. Weird, eh?

I don’t even know how late it was when I ate dinner. Probably something ridiculous like 9 pm? No matter. I had a craving for some mashed potatoes ever since someone at work was eating some this past week. Fortunately, I had some in the house that I needed to use up, so I got a little wild and crazy, and made some fancy mash.

I steamed up some Yukon gold potatoes, broccoli, and garlic cloves, while I also rehydrated some dried porcini mushrooms. I threw them all into bowl, and mashed away with some dijon mustard, Laughing Cow, green onions, pepper, and the little nub of roasted garlic havarti I had left. I think it turned out pretty good. Reminds me of twice baked potatoes, and the porcini mushrooms were almost like having bacon in there.

Alongside, I had three Turkey Feta & Spinach meatballs.

Although filling, there was a little room left for dessert. What can I say, I have cupcakes in my fridge that need to be eaten!

I had the other half of that scrumptious Nuttin’ Butter cupcake (fudgy cake + peanut butter crack frosting) with a scoop of So Delicious Vanilla Bean Coconut Milk Ice Cream, and more of those damn fresh raspberries. I’ll admit it, I’m a raspberry addict during summer.

I’ve had a few questions about how the red pepper jelly I have from time to time tastes – sweet or spicy? I would say that due to it being a jelly, and the fact that you are using sweet red peppers, it is definitely sweet. But it has heat behind it. The stuff that I use is my aunt’s homemade jelly, and I know that she includes jalapeno in her recipe. So it’s sweet with a little heat. It’s excellent with soft white cheeses like Laughing Cow, brie, camembert, etc. Hope that helps!


Now I must find my way to bed. Even though I’m all about being a night owl, I have a whack of phone calls I need to make tomorrow, so I have to work on “business hours”. Booo-urns. Night!

    Everything you ate today looks so good! Makes me hungry. I want to try out your tofudding sounds nice. Those mash potatoes sound so nice. I mean really really delish tasty yummy!

    The almond quinoa muffins look awesome! With the apricot chunks I want them even more 🙂 The mashed potatoes are also tempting my taste buds. What a great idea to add porcini mushrooms, yum. Good luck with the packing!

    ahhh, i’m in the middle of moving too. it can be so frustrating!! And those quinoa muffins look amazing! Apricots are delicious in ANYthing, yum!

    ahhh pink makes me soo happy!!! especially if it’s in your food! I always love your stir fry creations, but you’re totally right, leftover stir fry isn’t very good. It’s just too dry and ucky!!!

    I remember when we moved last year we had boxes every where! I never realized how much crap we accumulated in 9 years.

    Your stir fry looks as good today as it did the first day you made it! YUM!

    Glad to hear you were able to get out for a nice bike ride…
