Eye Of The…Devil?

I woke up this morning, with plans of taking some photos of myself to use for my student ID. We can submit all our information for our ID online, including our own picture, it just needs to be taken in front of a white background. So I was going to get all purdied up and do a little photo shoot. Too bad this is what I woke up to:

Actually, I woke up to my eyes glued shut from whatever was causing this sexy look. I’m not really into having a student ID that makes me look like a drug addict, so I figured today was not the day to work on that project. It also meant I was stuck wearing my glasses all day   And yes, they still look like that. I don’t know if it’s pink eye, an infection, or an allergy to something in the house, but it’s not cool.

Despite the fact that I looked like I’d drank my weight in moonshine the night before, I went on my day as planned and cooked up a great bowl of oatmeal.

Seeing as I have real peanut butter back in my life, I knew it needed to get together with a banana and make some oatmeal magic.

  • 1/2 cup oats, milk, water
  • 1 banana, thinly sliced
  • splash of vanilla
  • 1 tbsp flax seed
  • peanut butter
  • carob chips

The carob chips were an after thought. I found them in the cupboard, and there weren’t that many left, so I just threw them all on. I love how they start to melt slowly, keeping their shape and getting all glossy.

Of course there was the mandatory glass of juice. I’m still working through that jug of cranberry peach.

After cleaning up the kitchen, I figured I’d start in on some projects I’m trying to accomplish online. But again, my damn wireless wasn’t working I cannot figure out what’s wrong with it, but I can’t get a connection in the mornings for some reason. After 2 pm? The stupid thing works, and I’ve done nothing different to get it working. I’m going to have my dad look at it when he gets back from Vegas, because it’s a total pain in the ass. I’d like to be able to do things during my day, seeing as I have all this free time right now. ARGH!

Since my plans to get things done were shot, I got changed and headed out for a walk. As I was stuck wearing my glasses, the gym was out – I hate that they slide down my face when I get all sweaty. So a walk was my only real option for physical activity today.

Where did I go? To one of my favourite local spots – Rocky Point Park.

There is a great trail – the Shoreline Trail – that runs from the park, around the inlet, and to a small beach on the other side called Old Orchard. It is actually a part of the Trans Canada Trail. In total, it’s maybe 6 km return? It’s pretty easy walking, but it’s great to get out and be on the water, enjoying the outdoors. Plus it’s close to my house – can’t go wrong with that!

I took a crapload of pictures while I was out, because that’s how I roll. Usually, it only takes me about an hour to do the round trip, but with my dawdling it took almost 1.5 hours. Oops! Oh well, not like I had a schedule to stick to.

Since the tide was out, I took the opportunity to stop at the Old Mill Site on the way back to my car. The remains of the old mill are fun to explore, but you can’t always walk out there if it’s high tide.

And that’s just a sample of my photos. You should see me on vacation – last time I went away for 4 weeks, and came back with over 1300 pictures!

All that fresh air and photography made me hungry. Good thing it was lunch time.

I had picked up some 100% whole wheat cheesy kaiser buns at the store yesterday, and made myself a bunwich. It included honey ham, pickles, aged sharp white cheddar, lettuce, mayo, and mustard.

Since my internet was still being defiant, I got busy in the kitchen whipping up a new recipe. Sienna did a good job supervising from the kitchen table.

Shhh – don’t tell my mom she was on the table!

What was I creating today in the kitchen? Hummus! But not just any hummus – the Roasted Red Pepper & Almond Hummus from ED&BV. I had a craving for some red pepper hummus, so I cooked up the chickpeas and roasted some peppers yesterday. I was browsing my cookbooks for directions on how to roast peppers, when I came across this recipe. I looked in the cupboards, and I had basically all the ingredients. The only thing I was missing was red wine vinegar. I just subbed in fresh lemon juice. And mine wasn’t all red pepper – I had roasted some yellow peppers as well. Check it out.

Two thumbs up   I think I would add more garlic if I made it again, but otherwise it’s great. I really enjoy the nuttiness that the almonds bring to the hummus.

By this point in time, my computer was back in action, so I spent some quality time with the interweb. Of course, I was unable to get all the things done I wanted, but whatcha gonna do? Here’s hoping tomorrow is not a repeat.

My sister ended up going out with a friend for dinner, so I was on my own for food. Just like old times. I did a quick survey of the fridge/freezer/cupboards, and had dinner ready to go in less than 10 min.

I started with half of the leftover BBQ chicken breast from last night. I only had half because this was a big one.

I “baked” a sweet potato in the microwave, and had half of it with some butter, cinnamon, and brown sugar.

My foraging produced some frozen green beans. They were good to go after a quick steam.

And a few refreshing cucumber slices to round out the plate – and to use as a vehicle to consume some of that hummus I made earlier.

Apparently tonight’s dinner was a green & orange theme.

My sister got home, and we watched Hell’s Kitchen, then So You Think You Can Dance Canada. Which of course, led into dessert – in the form of ice cream

I topped a small scoop each of So Delicious Vanilla Bean Coconut Milk Ice Cream and Coconut Ice Cream with some melted chocolate chips, caramel sauce, blackberries, and almond slices.

And here we are again, caught up on my day, and past my bed time. I’m really hoping that whatever is causing my red eyes goes away ASAP. I want to take a jaunt down to the States, and don’t really want to be crossing the boarder looking like I’m high as a kite, even if they expect that from all us hippies in BC 😉 So with that, I shall bid you all adieu

    I love Hell’s Kitchen! I TivO’d the show last night so I have to watch it tonight, I’m excited 🙂
    You’re hummus looks wonderful, as does that turkey sandwich!! Yum.
    Sorry about your eye 😦 I used to get pink eye a lot when I was in high school for some weird reason, then I went to the pharmacy and they prescribed eye drops which worked miracles! Good luck.

    Ohhh…lookslike pink eye. I’ve had that before…not fun. Hope that clears up for ya very soon!

    You sure have some beautiful scenic locations out west. I think it’d be so cool to traverse a beach whenever I wanted!

    I secretly let my fur babies go where they want when mu hub isn’r around. 😉 Who’s ever gonna know? Not like they’ll tell anyone, rght???
