Running In Circles

Well, I’m amazed that the last post even uploaded. My internet was again, non-functional. It said I was connected, but nothing would load, and the upload kept timing out. Le sigh. What matters is it eventually went though, right? Right?  

After my super fabulous baking project was complete this afternoon, I decided I needed to get out of the house for a bit. I made my way up to Como Lake Park, to walk around the lake. I grew up going to this lake – I remember feeding the ducks, chasing the Canada geese just so they would hiss at me, sailing boats, pretend fishing, and even ice skating on the lake the one time it froze enough to do so! It’s nice to have a the lake situated right in the residential area for everyone to enjoy.

Anyways, I digress. I went up there for a walk, and for some reason got the idea in my head that I should try running. Yes, I thought running was a good idea. Voluntarily. I was obviously high or something – why else would I bother running? I figured I would do 5 laps of the lake, which I assumed was about 1 km per lap. I alternated walk-run-walk-run-walk, then made my merry way home. It took me about 45 min, but that included stopping to fix my shoelaces twice. Now that I’m home, I see that it is actually 1.2 km around the lake, so I actually did 6 km total. And I hate to admit it…but it wasn’t that bad. Don’t get excited though, I won’t be out signing up for marathons or anything soon. Any sort of pounding/jumping exercise still causes me pain, so we’ll see if I even get the desire to try it out again.

My sister was home when I got back, and we tried to decide what to do for dinner. I guess Fridays are normally “take out nights” around here, so she was suggesting places that I wasn’t interested in, and visa versa. Eventually we decided to just throw together our own dinners, and call it a night. She made herself nachos, while I brought out the leftovers.

I have lots of broccoli polenta and wild mushroom gravy left, so I made little stacks, and topped them with fresh chives, solely for aesthetic reasons.

On the side I heated up the other half of the baked sweet potato from a few nights back, again topped with butter, brown sugar, and cinnamon.

After some digestion time, I made my way down to the gym for a little time on the bike, and to do their circuit training. I like to do the circuit every once in a while just for kicks – it’s not super intense, but a good way to mix it up. Boy do I know how to party on a Friday night.

When I got home, it was dessert time. You know what that means – the big baking reveal!

I turned that bowl of blueberry goo into these fabulous brownies, courtesy of VeganomiconFudgy Wudgy Blueberry Brownies.

So why the blueberry goo? Well, the recipe calls for blueberry preserves. I can’t say I’ve seen alot of those in my grocery stores, but that’s not to say they aren’t they – I’m not normally looking for them. I figured why waste the money to buy preserves when I know we have a plethora of blueberries in our freezer. I just cooked a bunch down with some water & sugar until they looked like, well, spreadable fruit. Then I measured out what I needed, and saved the rest for spreading. I’m so clever 😉

Other than making my own blueberry goo, I didn’t really make any changes to the recipe. I used unsweetened vanilla almond milk instead of soy, since that’s what was in my kitchen, but that’s not going to make a lick of difference in the end. They turned out really well. Not quite as fudgy as I thought they might, but they still taste damn good. I really like the subtle hint of almond in them from the almond extract – it might only call for 1/2 a tsp, but it’s definitely there. Actually, when I added the almond extract to the blueberries, I was really impressed with how great those two tasted together. I see an oatmeal combination in my near future!

These bad boys bake in a 9 X 13 inch pan, and the recipe says it makes 16 brownies. That seemed like huge brownies to me, so I actually cut them into 24 squares instead. And of course, I had one for dessert, with a dollop of lemon yogurt and some of the leftover blueberry goo.

I ended up spending some quality time in the hot tub this evening, and watching a few episodes of Criminal Minds on tv with my sister – A&E shows it in marathons, and I think it’s her new favourite show. Then my parents got home from Vegas, so I ended up talking to them until way too late. Mom tried out my brownies, as did my sister, and they both got thumbs up. Good to know I won’t be forced to eat the whole pan myself 😉

Now it’s time for this baker to get herself to bed! Night!

    Way to go with the run! Yesterday I was at the store and I was trying to find grape spreadable fruit but all they had was blueberry preserves – haha! Next time we do an exchange I’ll have to send you one of the thousands of jars I kept seeing!
