Final Week

Not to be confused with Finals Week – that’s not for a little bit yet 😉

Can you believe this is the last week of classes for the semester? It seems like it barely just began. Where has the time gone? Tomorrow is December – crazy I tells ya.

I had the worst sleep last night – mostly because there was hardly any of it. I laid in bed, just waiting to fall asleep. I remember still being wide awake, and looking at the clock and seeing 1:30 am. Lame. Obviously, I was one tired chica when my alarm went off this morning.

At least I had the sense of mind to make a delicious breakfast.

This is my rendition of a yogurt parfait in a bowl (since we have no parfait glasses).

I layered one of my Apple Carrot Raisin Oatmeal muffins with yogurt, homemade pumpkin butter, and peanut butter.

With a glass of Happy Planet Tropical Tango to wash it all down.

It makes me glad I have a couple more muffins, and more pumpkin butter, solely so I can make this again. Excellent!

I also packed up a couple of slices of leftover pizza to munch on my transit ride home from school (Mondays are my “lunch on the run” day).

I also had my last volunteer shift of the semester at Sprouts, which I celebrated with a fudgy vegan brownie. Alas, I took not photos, but if you need a reminder, you can check it out here, here, and here. No worried though – I’ll be back there next semester, to dazzle you with more baked treats.

I arrived home, put on a face, packed up some resumes, and headed out the door to my volunteer shift at the local hospital. It was somewhat more thrilling than the last two times, simply because I got to do some extra things, and got to leave 20 min early. Which was perfect, because I made my way to a multitude of local Starbucks to drop off my resume/application package. Girl needs positive income flow ASAP! Plus, ya know…the discount would be great for those green tea lattes I’ve become so fond of.

Home I came, and vegged out on the couch with some quality news watching time. I also did some serious online discussing with my group in regards to our friggin’ paper. I swear, if this paper doesn’t kill me…did I mention I’m looking forward the end of the semester?

Mom cooked reheated dinner. Gotta love those leftovers.

Dinner was followed by more interwebbing, map designing, project discussing, and all that jazz. There was also some serious finance going on amongst me and the parentals, which I think has been the source of my stomach pains (and not illness like I thought). Oh stress, why you gotta be like that?

To fuel my brain and all the thinking it was doing, I noshed on an ambrosia apple with some Artisana pecan butter and more of that lovely homemade pumpkin butter.

I also downed a glass of milky decaf tea, because damn, it’s getting cold out there. We’re expecting –3 degrees Celsius by the weekend. BRRRRR!

Wow, I have this post typed up and ready to go, and it’s not even 11:30 pm! I think that’s a record for me lately. I’m going to take advantage and get into bed early. Night!

    That parfait looks fantastic to me! Let’s be honest, looks don’t count. It’s the taste that matters. Vegan browie = drool like Homer Simpson. Hope you got a better night of sleep!

    That pecan butter looks so good. Did you make the pumpkin butter? I didn’t see a link to a recipe so I wanted to ask. It looks and sounds great too. Best wishes for the end of your semmester!

    No need for a parfait glass to make that breakfast taste delicious! The muffin, yogurt, nut butter combo is ALWAYS a winner 🙂

    Great breakfast! My fingers are crossed that the ‘bucks gives you a call! It’s been cold here, too, but no snow to speak of yet! I can handle a winter like this one!
