Only A Day Late

As much as I wanted to bring you my eats from Monday on Monday, well, time just didn’t allow it. So here we are, Tuesday evening, and we’re gonna go back 24 hours for some food fun. You don’t want to miss my back to school eats, do you?

My 5:30 am wake up call came far too early for my liking, but I didn’t let it stop me from enjoying a tasty breakfast.

Oats are generally off the menu when I have to wake up before the birds, but I still wanted a warm cereal breakfast. I thought for a few minutes, then came up with an idea. It started with an apple, chopped up, sprinkled with cinnamon, and heated in the microwave.

Then I added some Kashi GoLean Crunch and milk, and popped it back in the microwave for another minute so the whole bowl was toasty. Top with some peanut butter and craisins, and breakfast was complete.

It paired nicely with the a glass of white cranberry juice.

I’m sure I’ll be trying variations on this breakfast in the near future.

Off to school I went, back to biochemistry. Did I mention I think it’s just plain cruel to have biochem at 8 am? Especially after a nice winter break filled with sleeping in. Oh well, I survived, then found a quiet, comfy place to spend my 3 hour break until my next lecture. Plus I wanted to avoid the torrential downpour outside.

This semester I will be packing my lunch every day, as I’m at school over lunch time. What did I have for my first lunch of the semester?

Some carrots, cucumber, and celery, as well as some leftover roasted chicken.

Hummus and dill dip. Who doesn’t love a lunch that involves dips and spreads?

I know it seems a little random, but hear me out. The dill dip was for the veggies, while I used the hummus as a spread on the wasa crackers, and then topped it with the chicken.

It was a great little idea that I’ll have to remember for the next time there is leftover roast chicken. I love lunches like this, with lots of little parts, and where you get to play with your food 😉

My second class was a new one this semester, and finally a food & nutrition course. This one is titled “Exploring Our Food”. I believe it is the first food science course I’ll be taking as I pursue my dietetics degree. I’m looking forward to it!

I made my way home, and was in need of a snack. What can I say? Lunch was light.

Dad had bought a wee little pepperoni pizza and garlic bread sticks, so I snagged a piece of each and enjoyed every salty, doughy bite.

It was followed by a little chocolate indulgence.

We picked these up at Costco – they are chocolate cups filled with a Belgian chocolate cream/mousse? They come in a variety of flavours. I think this one was salted almond. Delicious!

I lounged around for the afternoon…I think? Is it sad I can’t even remember yesterday? I must be getting old. Anyways, we eventually had dinner. My mom is part of a hiking group, and Mondays are their hiking days, so dinner is always something quick (although, why she doesn’t just ask me to cook something is beyond me).  Nothing quicker than soup and a sandwich!

And a grilled cheese for dunking. But wait – this was no ordinary grilled cheese. I kicked mine up to gourmet level by using Silver Hills “The Big 16” Sprouted Grain Bread, 2 year old aged white cheddar, and pesto. Nom!

After some digestion time, I made my way down to the gym. Ugh, I forget every January how insane it gets there, with all the resolution-ers out there. Good on them for getting out and moving, for sure. It just means the gym is super busy all. the. time. Hopefully in a month or two it starts to thin out, at least a little bit. That being said, I was still able to enjoy all the machines I wanted – I went for a cardio trio, consisting of the stairclimber, treadmill (incline walking), and stationary bike.

When I got back, it was snack time. And I had the perfect snack waiting for me. See, right after dinner I saw some super ripe bananas on the counter, and had the sudden urge to bake. I considered a banana bread, but when I opened up ED&BV and saw the recipe for Cocoa Banana Muffins, I was sold.

I pretty much followed the recipe as written. I did use spelt flour instead of barley, used dairy milk (since that’s what we had), and added a few tablespoons of raw cacao nibs to the batter for fun.

Great little muffins. They satisfy a multitude of cravings – muffins, banana bread, chocolate. They are slightly sweet, and the addition of cacao nibs give you a little crunch throughout. Chopped nuts would be a good addition as well. My sister enjoyed them, while my mom said they tasted “wholesome”. That was sort of the point though – otherwise, I just would have made cupcakes!

So there you have it, my first day of the new semester. I just couldn’t pass up sharing all that good food with you, especially since I got myself in the kitchen and did some baking 😀 Time for me to get to bed – 5:30 am is quickly approaching. Night!

    wow, this was really a lot of amazing foods! This muffins look and sound divine.
    Sometimes, I really have a hard time planning my lunch for uni. I hope you’ll be an inspiration for me this semestar 😀

    Those muffins look delish!! Ugh, I hate packing my lunch! I almost always pack hummus & carrots, apple, orange, sandwich, bar. Must start switching it up!

    5:30 is so early!!! I so need to bake up some muffins. I’ve been craving them like crazyness. Yours look so yummy.

    I’ve heard of the microwaving cereal idea–haven’t tried it yet! I bet it’s delicious though.

    It is really cruel to have biochem that early. Especially after a 5:30am wakeup call. At least it’s only for one semester?
