Not Nearly Long Enough

Another weekend is quickly coming to an end, and again, it just doesn’t seem long enough. All week I think about all the things I want to accomplish on the weekend, but I guess I’m over ambitious, because I never get around to everything. At least I managed to stay up to date on my school work 🙂

I had a glorious sleep in this morning, followed by equally impressive oatmeal.

  • 1/2 cup oats, milk, water
  • frozen blackberries
  • splash of coconut extract
  • 1 tbsp flax seed
  • Artisana Coconut Butter
  • chocolate chips
  • coconut flakes

Sunday morning was off to a good start.

Since it wasn’t raining, and a balmy 10 degrees Celsius out, I decided to go for a walk around the inlet. I think everyone in the area had the same idea, because there were tons of people, walking their dogs, playing on the playground, enjoying their Sunday. You gotta take advantage of those non-rainy days around here, especially in January!

Once I got home, I had a little lunch/snack – a toasted English muffin with two topping combos. One half had peanut butter + raspberry jam, while the other half had sunflower seed butter + apricot jam.

I also set to work on a cooking mission, to be revealed tomorrow. Here’s a sneak peak at the ingredients.

It definitely made the kitchen smell good!

I did some homework and readings, and maybe played a little Wii until dinner time.

Mom made meatloaf, topped with ketchup.

A baked potato, with a touch of butter, pepper, and garlic powder.

And some apple & grape salad. I *think* mom puts mayo on it? Or Miracle Whip? I’m not really sure. I kind of wipe alot of it off while eating it 😉

There was more homework to be done after dinner, as well as some yoga, a shower, and I even prepped my breakfast for the morning. Then had a little snack.

Half of a ruby red grapefruit, plus some milky peach oolong tea with a drizzle of agave syrup. Better enjoy the citrus fruit that I have, because it looks like they’ll be skyrocketing in price, what with the freezing temperatures in Florida. I can’t believe we have +10 degrees C here, while they have lows of –3 degrees C down there. Crazy!

Good thing this post is done, because I must find my way to my comfy bed. I know my early wake up call will be here sooner rather than later. See you tomorrow for my cooking creation recipe. Night!

    oooh girl that oatmeal looks delicious! ih aven’t had berries in mine in FOREVER!

    I finally just gave in and realized that I get my best work done during the week. My brain goes into super slow and relaxed mode once Friday hits.
