In The Dark

***This post was meant to go up Thursday morning, but due to the power outage and technical difficulties with my laptop, it was a no go until Thursday night. I hope you still enjoy!***

Sorry about no post last night, but my house was left powerless, and therefore internetless for the evening. No clue what caused the outage, but it affected 2 neighbouring cities as well, so it was a pretty big one. Fortunately, we’re back up and running!

Yesterday morning I was inspired by a new bag of English muffins sitting on the counter, and knew I needed to use one in my breakfast. So I toasted one up, and topped it with the usual combination of peanut butter & raspberry jam.

I also had a mini bowl of cereal – Nature’s Path Pumpkin Raisin Crunch.

Off to school I went to learn. The jury is still out on whether I accomplished any of that. I did, however, accomplish lunch consumption.

I was pretty pleased with my lunch creation yesterday, stemming from soft taco leftovers.

I made a mini Tex-Mex dip! One of my favourites. It even held up through my commute for its photo shoot.

I layer spicy refried bean, Greek yogurt, cheddar cheese, avocado, green onion, and – GASP – a wee bit of tomato. As much as I despise tomato, I have to put it on my Tex-Mex dip for that pop of colour. Here’s the side view.

I brought along a few different vehicles to scoop up that fiesta of tastes. Including Mary’s Gone Crackers.

I was only able to plough my way though 3/4 of my mini Tex-Mex before my belly was full and happy.

I slept through was very attentive in my afternoon lecture, made my way home, and shoved more food in my face since I was heading out the door to work for the afternoon. I grabbed the quickest snack I could find – a Kashi Peanut Peanut Butter granola bar.

Work was uber slow, and not so fun since my legs were on fire from the workout I’d done the night before. Standing + burning quads = pain. I survived, and made my way home to relax for the rest of the evening with some hockey.

Or so I thought.

I literally got in the door, took off my shoes, got changed, and was putting together my dinner when bam – the whole house goes black. The power was out – which not only make it hard to watch a hockey game on tv, but it makes heating your dinner basically impossible. So I fumbled around with food, got it on a plate, and ate by the glow of the kerosene lamp.

Mom had made a roast, so I had a slice, with some peas and roasted butternut squash. I added the piece of whole wheat bread with a little butter, because it just sounded like a good idea.

And you know, the bread was a good idea – so good, in fact, I went back and had another slice 🙂

We got out all the flashlights, lit some candles, and sat around in the living room listening to the hockey game on the radio. Really, what else was there to do? Boredom set in, and we all went to bed. I think that’s the key to getting me to go to bed earlier than 11 pm – if there’s no power, I have no reason to stay up!

    What is it with Canadians loving Mexican food?! I guess everyone loves Mexican food, but I’ve had it the past couple days as well!

    Insane winds you’ve been having, the Island hasn’t been too bad, but still grateful that we don’t have it too bad!

    I haven’t had a tex mex dip in ages! Looks great.

    I love the mini Tex Mex Dip idea! I always have those ingredients on hand and quesadillas, tacos, etc. get so boring. Thanks for the idea!
