Who Likes English Muffins?

I do! I do!

What can I say – those doughy, spongy little wonders are delicious. I think because they have the crevices that fill up with whatever tasty spread you put on top. Kinda like waffles, but not really.

As I’m sure you can guess – I had one for breakfast. Topped with peanut butter and grape jelly.

Alas, I ran out of my natural peanut butter, so I had to settle for the family’s sugary stuff. What I won’t do for a scrumptious English muffin, eh?

I paired this with a small bowl of Kashi GoLean Crunch.

I was out the door 10 minutes earlier than normal – which really, just meant I was on time, instead of 10 min behind like I normally am. I was in biochem before our prof reviewed what we did last class. Woo! And then he reminded us we have a midterm coming up on February 1st. I’ve been in denial about midterms, but knew they were quickly creeping up on me. I guess I’ll have to start that whole studying process again.

At least I’d made a great lunch the night before, to take my mind off of silly things like midterms.

Quesadilla! I sauteed up some mushrooms, and put them in this black bean & salsa tortilla with 1/4 of an avocado (smashed), green onion, and white cheddar.

Heated up in a pan until the cheese melted, then put away until today. Sure, it wasn’t hot when I went to eat it, but it was still damn good. I should have added some corn as well – that would have kicked it up that extra notch.

I even mixed up some salsa & sour cream for dunking my quesadilla wedges in. No half-assed meal here!

In my food science class, I was then reminded that I have a quiz that needs to be completed online by the end of the weekend. Perfect – seeing as I have to work 8 hour shifts on both Saturday & Sunday, plus we’re having a party here Saturday, and I have an interview on Sunday. It’s that time of year again – when everything happens at once!

I made my way home from school, with only one thing on my mind – nap time. And yet, what did I do instead? Well, first, I got a snack.

English muffin #2 of the day. This one was toasted, and spread with a little butter. Nice and simple.

Then I took my English muffin downstairs, and set up camp in the recliner. I played some Dr Mario on Wii until my eyes refused to stay open, then chilled out listening to the tv, and taking advantage of the massage function in the chair. Gotta love that!

I don’t think I ever fell asleep though (bummer). I went upstairs to check out the dinner situation, which turned out to be breakfast for dinner – in the form of waffles. I wasn’t feeling the waffle today, and didn’t see anything readily available that floated my boat, so I went out to accomplish the errands I needed to.

I hit up the mall, with the sole purpose of buying something to wear to my interview on Sunday. Now, I know normal people have interview clothing in their wardrobe. I am not one of those people. I worked in an office where the dress code was very slack, so I lived in jeans 24/7. Now I’m a student – like I’m getting fancied up for school. So trust me, this shopping excursion was necessary. I ended up buying a classic black sweater, and I’m going to borrow a pair of my sister’s dress pants, so I think I’m set now.

After my successful shopping, I made the drive over to the grocery store, because hello, I’m out of good peanut butter! While I was there, I also picked up a little something for dinner (seeing as it was 8 pm by then).

Hello there beautiful sushi. They had some real crab California rolls, so I went with that. Can’t beat the real crab.

Sure, fresh made sushi from a restaurant would be better, but let me tell you, Thrifty Foods makes some decent grab & go stuff.

I enjoyed my sushi while watching the Haiti telethon. My dad tried to get through, both online and on the phone to donate, but they must have been overloaded, because he never managed to make his donation. He’s going to try tomorrow though – hopefully it’s working then.

Since my weekend is so jam packed, I actually got my online quiz out of the way. Hopefully I did alright – we don’t get results until it closes on Sunday night. At least it’s open book 🙂

I’ve just finished sipping on my tea, and I think it might be about time to go to bed – since I didn’t get to the gym tonight like I wanted to, I’m hoping I can rise & shine and make it there before work. Yes, this coming from Ms “I Don’t Do Mornings”. We’ll see what actually happens. Best intentions, right? Night!

    I don’t know if you’re into culinary challenges, but there is a recipe from America’s test kitchen floating around for english muffins.. incase you have nothing else going on this weekend (haha).

    I have a super busy weekend too! I like the idea of a quesadilla to go- if its crispy enough it would be easy enough to eat without a huge mess.

    Yay for english muffins, I haven’t had them in forever! But I love them 🙂

    I love English muffins. They’re best with PB, IMO, because it really gets into all those nooks…Noah has taken a real liking to them recently, too so we are going through a ton of them.

    Your chair has a massage function!!!??? Where ever did you get such a thing!!??
