Who Likes Snap Peas?

I do, I do!

Yes, last week it was English Muffins. This week, it’s all about the snap pea. It all started on Thursday last week, when they served snap peas with my meal at the restaurant for my mom’s birthday. So when we picked up the veggies for the big party on Saturday, a large bag of snap peas came home from Costco. Can’t let them go bad now, can we?

And again, you are getting a 2 for 1 deal with this post. Are you ready?!


Back to school with an early morning. Hence the boring breakfast that warrants no more than one photograph – Nature’s Path Pumpkin Raisin Crunch cereal with half a glass of Happy Planet Tropical Tango juice (cuz that’s all that was left).

Transit ride, biochem lecture, blah, blah. You know how it goes. But Mondays are Sprouts days, so of course that meant a delectable baked good to enjoy at lunch!

But first, I was a good girl and ate my leftover macaroni & cheese.

And fulfilled my produce requirements with some snap peas, grapes, and a local kiwi.

Then it was time for the good stuff – Quinoa Blondie!

These delicious morsels are completely gluten free, but chocked full of goodness – quinoa, brown rice flour, chocolate chips, raisins, cinnamon, and more. And they are so moist. I wish we had them every week at the store – but then I would have to choose between this and my beloved Vegan Brownie.

Food science, transit ride, blah, blah.

Finally found myself at home, debating a nap or a walk. I decided I wasn’t that tired, so off I went for a wander around my neighbourhood. The plan was to do some yoga when I got back, but I was feeling lazy, and chose to chill until dinner.

Speaking of dinner – it was nothing fancy. Still working on those party leftovers.

The rest of my evening was spent watching my Canucks win another hockey game, drinking some tea, then deciding to do that yoga I put off earlier in the afternoon. Which I must say, was the perfect relaxation before bed – especially when I had a stint in the massage chair afterwards 😉


My body must be getting used to 5:30 am wake up calls, because I was wide awake at 5:25. Too bad I don’t have to get up until 6:30 on Tuesdays! I’m stubborn, so I stayed in bed. I nodded off, but was up again at 6:15, and figured I should just go with it. So I made oats.

  • 1/2 cup oats
  • 1 cup water
  • 1/2 scoop vanilla whey protein powder
  • splash of vanilla extract
  • 1/2 tsp matcha green tea powder
  • dried goji berries
  • 1 tbsp flax seed
  • Artisana Coconut Butter

I also packed a nutritious and delicious lunch to enjoy in cell biology – always keeping my fellow students in mind 😉

Especially with my hummus, avocado, and Monterey Jack cheese sandwich(on the usual Silver Hills bread).

Plus some Greek yogurt, peanut butter, agave, and frozen blackberries (Kashi GoLean Crunch to be added later).

The sandwich and veggies ended up being filling enough, so I saved the yogurt until I got home.

I putzed around for a bit, then made my way to the gym to get my sweat on. A shower and some news watching later, and dinner was finally ready. And let me tell you, it was a good one.

We started with some roasted chicken.

And roasted veggies – sweet potatoes (both white and orange) and onions. I love roasted onions – they get so sweet!

And uh…steamed snap peas.

And my new favourite way to cook mushrooms – sautee them up in a little canola oil with fresh garlic and oyster sauce. So good!

Even though it was a school night, I also enjoyed a little glass of red wine. What? It was open from the party – can’t let that stuff go to waste!

Dinner received raves from the whole family. I was in charge of the mushrooms and snap peas 🙂

We cleaned up the kitchen mess, then I settled in for some Biggest Loser with my sister. Eventually, it was time for a snack.

I decided to try out something I’d seen on K’s Good Eats – an English muffin topped with Laughing Cow & cinnamon. I also added a little brown sugar to mine.

Paired nicely with a mug of cinnamon apple tea.

At first I wasn’t too sure about the LC/cinnamon combo, but my plate is clean, so I guess it couldn’t be all that bad 😉

    That quinoa blondie looks to die for. I think I try to goole a recipe for that!

    Mmm..roasted chicken dinner….makes me think of Sunday meals as a kid. 😉

    Mm, those snap peas do look perfect! We rarely buy them as they seem to go bad quickly, and we often forget they are in the fridge. But, I do love them in stir-fries. Now you have me thinking about English muffins too!

    Let me know if you ever figure out the recipe for those Quinoa Blondies, they sure look amazing! When I first saw your oats, I thought it was guacamole!

    I would absolutely come help you with those party leftovers if I could–snap peas and red wine? Yes please!

    And I LOVE roasted chicken, definitely don’t enjoy it enough.
