Let’s Do Lunch

Have your people call my people, and we’ll set something up 😉

If only I had people.

Do you have people?

How about we just look at some lunches I’ve enjoyed over the past few weeks instead?



Yogurt, cantaloupe, a strawberry, Vega Vibrancy Bar, cookie crumbles from Hangry Pants Heather.


The quintessential school lunch – peanut butter & jam sandwich.


A homemade baking powder biscuit with cheese, basking in a sun beam.


Homemade split pea & barley soup, garlic roasted chickpeas, Wasa crackers, carrots, Laughing Cow.


A Sprouts vegan brownie Monday lunch – peanut butter & banana sandwich, carrots, snap peas, and of course, the brownie.


Half & half – half brought from home, half bought at school. I brought the apple and garlic roasted chickpeas, but bought the Starbucks (green tea latte – was there any doubt?), and the organic multigrain bagel with asparagus lemon cream cheese (from Bernoulli’s Bagels).


Tsk, tsk…another lunch purchased at school (I had a midterm at some ungodly hour that morning, and studied all night, so lunch making wasn’t on my mind). The feature spring burger from the Pit Burger BarVeggie burger with local mushrooms and spring greens.


Best idea ever – leftover blueberry pancakes with Greek yogurt/peanut butter/maple syrup for topping. And yes, I ate that in the middle of class.


Homemade mac & cheese, dried mango, veggies & dip, and a Sprouts cookie. The dip is one of my current obsessions – a touch of mayo, yogurt, dijon mustard, dill, pepper, garlic, parsley. Yum!


Some totally meh frozen pizza my mom cooked up one day.


The last few spoonfuls of Liberté Greek Yogurt with strawberries, peanut butter, and honey.


Carrots, cucumber, Mary’s Gone Crackers, and sunflower seed butter for dipping the whole lot.


A bbq chicken/caramelized onion/refried beans/avocado quesadilla, sour cream & salsa for dipping, and an ambrosia apple.

You’d think after all those soup & sandwich lunches I suffered through consumed as an Olympic volunteer would have put me off the sandwiches, but apparently not. Although, I haven’t really eaten much soup lately. Hmmm…coincidence?

Now it’s your turn – what’s the best lunch you’ve eaten lately? I need some more creative ideas!

    I love how your eats are so simple and so good. This is a perfect day of food really. The pizza looks better than meh…but sometimes food just does.

    Love all the food recap!! You can never go wrong with mac n cheese!

    I made another batch of my Chicken Tikka Masala – so good and spicy!! I brought it to one of my co-workers today – his wife doesn’t know how to cook very well, and he said he was watching Anthony Bordain and said to me “I’ve been missing out on all this food!” I told him I would bring him some in today – and as he was heating it up, he returned my tupperware and said “I know I am going to love it just by the smell!”

    DANG! You have had some amazing lunches!! I particularly like the pb n j sammy’s, frozen pizza, and quesadilla action!! Fish and chips aint too bad either!! YUMMMMMMMMMM
