Goodbye 5 Day Weekend

My 5 day weekend has come to a close. I will have to go back to classes tomorrow. It seems like it has been an eternity since I was last in lecture! Fortunately, I only have two weeks left of class, then a few exams and I’m free for the summer. Can you believe it? Time flies people…time flies.

Obviously, I made sure to get in one more sleep in this weekend, since tomorrow will be an early morning. Then I enjoyed some greens+ extra energy in a beer glass.

Nothing like starting your day with a tall glass of frothy swamp water!

This was then followed with a little breakfast action. Like cereal – Kashi High Fibre Clusters & Flakes with some Peanut Butter Puffins.

And a piece of toasted Silver Hills sprouted grain bread with some Almond Budder Extreme and homemade grape jelly (last of the jar).

After some leisurely internet time, I got off my ass and headed on down to the gym for a little cardio fun on the stairclimber. I wanted to get in some time on the rowing machine, but my gym only has 2, and they were both being used. So I just came home instead, and threw together some lunch.

I made a wrap with the last of the sardines I had mixed up (sardines, carrot, dijon, mayo, dill), some cheddar cheese, dill pickles, and spinach.

And I finished off the last couple of spoonfuls of Liberté Greek Yogurt with a spoonful of peanut butter, drizzle of agave, and sliced strawberries.

Alas, I only ate half the wrap, when I decided that sardines just aren’t for me. I think they are just a tad too fishy for my to enjoy. Which is a shame, because they are a pretty rockin’ seafood choice, both nutritionally and sustainably speaking. Do you have a good sardine recipe that masks their overtly fishy-ness?

Eventually, it was time to make my way back out into the world to visit the senior’s manor at the hospital. I helped them out with dinner, then ended up working on a jigsaw puzzle with a few residents for the rest of the evening. There was no regular evening program due to it being Easter Monday, so it was pretty quiet around there. It also meant I could leave early, and get home to enjoy dinner with the family.

Which I’m sure you can guess was….Easter dinner leftovers!

Again, there were the usual suspects – turkey, potatoes, stuffing, gravy, veggies, bun.

The vegetables deserved a glamour shot tonight – roasted acorn squash with cheddar, carrots, and asparagus.

Finally, I figured I should settle down and get some homework done. I had an assignment for food science that needed writing, even though technically, it’s not due until 11 pm on Tuesday, Apr 6th. Since I have to work until 10:15 tomorrow night, I figured it would be in my best interest to get it done now. It was a thrilling little report on the process of making and packaging skim milk powder vs evaporated milk. And of course, we had to justify which one we would purchase. And again, I had to argue why I would purchase neither.

To make the whole process a little more entertaining, I enjoyed a little Sex in a Pan.

Yes, I’m talking about the dessert. What were all your dirty minds thinking? 😉

Once that assignment was written and submitted, I busted out my biology pre-reading assignment in about 5 min flat, and said good night to the homework, just in time to get in a shower and grace you all with this post.

But now, we must say goodnight, because this girl has some classes to attend tomorrow. Parting is such sweet sorrow…good thing we’ll meet again tomorrow. Night!

    I’m with you on sardines being too fishy and I thought I liked all fish. If you get good tips let me know b/c they are nutritional powerhouses.

    I miss the days of being free for the summer! The dessert looks so good!
    I’m not a sardine fan either. But I love fish and seafood. Something about those little guys I can’t do.

    Uh, yeah, I HATE sardines, even before I was vegan. But I’d cram that Sex in a Pan in like sardines! This sounds wrong on so many levels.

    I feel your pain on the going back. We’re on Spring Break right now (I’m a teacher) and I’m already dreading having to go back Monday. Hang in there, though. The end is near!

    Btw, that dessert looks AMAZING!

    Ugh, sardines are too smelly, but I know they are good for you………you, not me! Your Easter dinner looks great, nothing better than roasted squash!
