Playoff Fever

My morning started off way too early when my alarm went off at 5:30 am. After turning off the blasted thing, I laid in bed, having a little dialogue with myself, on whether I wanted to actually get up then or not. It went something like this:

“If I get up now, I have time to make oatmeal. I haven’t had oatmeal in awhile.”

“But my bed is warm and comfy.”

“And the cat is curled up next to me. I shouldn’t disturb her.”

“I can always make oatmeal tomorrow.”

As you can imagine, I stayed under the covers until the last possible minute. I still managed to get some food down the hatch before heading out the door though. Including this toasted Ezekiel English muffin with peanut butter & raspberry jam.

The best playoff article of the day? Where they feature some of the favourite recipes and restaurants of the Canucks players. Obviously key information we need to know going into the playoffs 😉

I found myself all the way out at UBC for my one class at 8 am, which was a thrilling conclusion to biochemistry (sarcasm much?). Then I was back on the bus, and home before 10:30 am. Perfect time for a mid morning snack.

I turned my pancake icing into an apple dip. Yum!

What is this pancake icing I speak of? Just some Greek yogurt, peanut butter, and maple syrup all mixed together. It has the consistency of frosting, and tastes spectacular. Also make a great fruit dip – for things like crunchy ambrosia apple slices.

I then spent some time selecting my players for not one, but 2 hockey playoff pools. What can I say, I’m hardcore. I probably won’t win, because I never do, but it’s always fun. Especially if your team gets eliminated – that way you still have some players to cheer for.

I decided to then make my way to the gym, seeing as I had a whole day in front of me before work. Totally looking forward to the summer off from school, so I can go to the gym during the day. There’s so few people there, it’s great!

Once home & showered, it was time to get some lunch in my belly. And I had the perfect lunch ready and waiting for me.

The last of my homemade brown rice veggie sushi. It had started to get a little soggy, but still tasted great.

I also nabbed the last few chip crumbs.

And enjoyed some Happy Planet Extreme Green juice. Definitely a new food love of mine.

The sun came out just as I went outside to take photos. Talk about timing!

It was too nice of an afternoon to have to spend it in work, but sometimes that’s how it goes. It was 16 C! I had the sun roof open on my short drive to work. And I *almost* didn’t need my sweater in the store. Almost – our store is pretty damn cold.

While at work, I contemplated what I would create for dinner. I knew I wanted to use the other half of my steak from dinner last night in something. I considered a quesadilla, but quickly changed my mind when I saw a customer buying tzatziki. I quickly picked up some whole wheat pitas and the aforementioned tzatziki once my shift finished, and made my way home to create!

It started with the steak, sliced thinly, some tzatziki, and onion.

Next I added creamy avocado and cool cucumber.

Then added a wee bit of shredded cheddar, and more of the sauce.

Add a little leaf lettuce, wrap, and eat!

Excellent use of my leftover steak. I so thoroughly enjoyed this, it’s not even funny. Even if it was a wee bit messy to eat.

Some ANTM & Criminal Minds later, and it was time for a little something sweet. Sure, I could have dug into the Easter candy, but I wasn’t feeling it. So instead, I made a dessert quesadilla, plus some milky chamomile tea.

Um, yeah. Obviously, it was amazing. Hazelnut butter is where it’s at!

And now, it is time for sleep. One more class, and my semester is done tomorrow. Plus I need to get pumped up for the Canucks first playoff game tomorrow night – I will be racing home from work to catch it in all its glory. Yeah!

    You should be a food photographer. The picture of the Ezekiel English muffin with peanut butter & raspberry jam totally highlights it’s immense deliciousness.
