Muffin Musings

Yesterday, when my dad picked me up from the train, he told me I’d received a package that “weighed a tonne”. I was at a loss as to what it could be. Obviously, it was the first thing I tore into when I got home.


Okay, so it didn’t quite weigh a tonne – just 3.25 kg 😉

In all my exam studying, I had forgotten that I agreed to participate in The Wellness Show’s Mom’s Media Muffin Contest, sponsored by Rogers Foods Ltd. As a participant, I received a bag of Roger’s Whole Grain Whole Wheat Flour, as well as a package of Hazelnuts & Honey 5 Grain Granola. Hello!

The premise of the contest is as follows – develop an original healthy muffin recipe, using any of Roger’s flours that somehow relates to the theme of Mothers and Mother’s Day. The prizes for the contest are donations to the charity of your choice. So even though I should spend all my time studying, how could I not participate in something that involves baking and money going to a good cause? I mean, really.

Now, although I’ve mapped out a basic muffin blueprint in my mind, I’d love for my reader’s input on a few things:

  1. What would be your ultimate flavour combination for a muffin?
  2. What is your “secret ingredient” to make a moist muffin, yet keep it healthy?
  3. What natural sweetener would you use in a healthy muffin?

Please post your answers to any or all of those – there may be something out there I never though of that trumps my own ideas 🙂

    peanut butter muffin with banana in the center!
    coffee flavor with banana in the center is also very good. I know, it sounds a bit weird.
    I think that canola oil helps to make a moist muffin.
    Natural sweeteners like agave syrup, cane sugar, maple syrup and honey are all good 😉

    I am particularly fond of orange and cranberry muffins. I think some nuts would be a good addition, or maybe some nut butter-maybe a blob of almond butter in the center?

    I like agave in my muffins as a sweetener. I bet coconut blueberry would be great!
