Why hello there summer vacation, how are you?
As you know, I’ve kicked off my summer vacation with a bang – or least some fun – by going to The Wellness Show this past weekend. I’ve also watched some hockey, socialized with friends,, hit up the gym, and worked. It’s been good times all around, with many more to come until I have to make the daily 2.5 hour round trip trek out to UBC in September again.
Of course, I’ve been enjoying some tasty eats that I think we should catch up on now.
I’ve been loving the summery, non-cooked breakfasts lately – as in not oatmeal. Such as this combination of Liberté Greek Yogurt, peanut butter, and maple syrup topped with granola, frozen blueberries, and strawberry freezer jam.
So nice, I’ve had it twice.
Also on the breakfast menu has been good ol’ cereal. Such as Nature’s Path Pumpkin Raisin Crunch with unsweetened almond milk.
Happy Planet Clean Green juice has made an appearance many a time.
Not to be confused with my greens+ extra energy, which I’ve also still been consuming.
I’ve also been rockin’ the cement/swamp water looking smoothies as of late.
This one was made up of banana, spinach, avocado, peanut butter, cocoa powder, Vega Sport Performance Vanilla Protein Powder, and almond milk.
While this creation…
contained frozen blueberries, spinach, avocado, coconut, Vega protein powder, and almond milk.
And it went well with this sandwich….
…Silver Hills sprouted grain bread, tuna, avocado, and dill pickle.
Speaking of sandwiches, tuna made another appearance on another date.
While a turkey, ham, havarti, avocado, dijon, dill pickle, onion, spinach bunwich made a great late night dinner another day.
Especially with those chips & dip, and bubbly beverage on the side.
No, it wasn’t beer, but a delicious vanilla creme soda. Love!
Dinners have also featured the classic roast beef & gravy meal.
Complete with roasted potatoes and carrots.
Some dinners have served as lunches the following day.
Like my mandarin almond chicken (chicken, celery, carrots, onion, broccoli, almonds, mandarin oranges) over brown rice.
I’ve also had my fair share of baked goods. Like my mystery muffin (recipe soon, I swear!)
This beauty from my store…
…which I believe is called an “Almond Mac”. All I know is it’s three conjoined macaroons, topped with almonds, and coated in chocolate, and it’s beyond divine.
Then there was this…
…a chocolate trifle, also courtesy of my store’s bakery.
It’s the chocolate covered cream puffs that suckered me in.
Good thing I live with other people, so I didn’t have to eat the whole thing myself.
I’d say there have been a plethora of good eats these past few days, wouldn’t you? Let’s hope the good food trend continues through the summer. And now that I have all this free time on my hands, I should be back to daily posting. Yay! Bring on the summer!
What is freezer jam? Frozen jam?
Beer, chips and a burger, it doesn’t get much better for a summer meal! All the ‘treats’ look scrumptious.
i would definitely love to be a guest at ur place… your meals always sounds and look amazing to me. im enjoying the more simpler meals too, and starting to get more into the dif types of yogurt. liberte brand is top notch.

I am 2 papers and 1 final away from Summer as well..graduating actually! But then the difficult part comes with finding a job and/or applications for grad school!
