Oh, The Irony

Wasn’t it just yesterday, when I was saying how much I’ve been enjoying summery breakfasts lately? Well, look what I went ahead and made this morning.


Yes, that would be a bowl of steamy oatmeal. Apple Raisin Cinnamon oatmeal to be exact.


  • 1/2 cup oats
  • 1 cup water
  • 4 tbsp skim milk powder
  • 1 braeburn apple, chopped
  • raisins
  • cinnamon
  • 1 tbsp flax seed
  • Almond Budder Extreme


With the very last glass of my greens+ extra energy.


I’m gonna miss my swamp water in the mornings.


Why did I go with the oatmeal this morning? It was freakin’ cold when I got up! And we had some crazy weather all day – rain, hail, sun, hail, rain, etc. You get the picture. But the temperature definitely dropped a few degrees today.

After my hearty breakfast, I was off to deliver a package of my award winning muffins to my mom’s friend. She broke her wrist on the weekend, and is in the midst of having their kitchen renovated, so mom thought it would be a nice thing to do. I think I’ve made more muffins in the past 10 days than I have in the past year!

I ran a few more errands, then came home to make good use of fridge leftovers for lunch.


There were a few spoonfuls of mandarin almond chicken leftover, so I threw them on a bed of baby spinach, and heated the whole lot up in the  microwave.


Since that wasn’t really much food, I toasted up some Silver Hills sprouted grain bread, and smashed on 1/4 of an avocado, sprinkled on some cracked black pepper, onion, and garlic powder, then threw on a slice of cheddar, just because.


We have an abundance of avocados to eat up – I had 4 in the fridge, and mom bought 5 more on the weekend because they were on sale! Expect to see alot of its creamy goodness around here for awhile.


I followed lunch with one of my Hungry Hiker muffins. We only sent 1/2 the batch to my mom’s friend – mom wanted to keep some for the house as well. This batch I made with raspberries.


I would love to say I had a productive afternoon, but that would be a lie. Well, not totally. I spent alot of time taking care of emails and things like that. Stuff I put off, even though it would take less time to deal with as they come in, instead of all in a big bunch. You know how it is.

As is turning into the norm on my Zumba nights, dinner wasn’t going to be ready for me to consume and digest before shakin’ it, so I had a little snack while watching two hockey games and doing word searches.


The Tasty Tropical Bumble Bar.


You may remember that I have waxed poetically on how much I love the Chocolate Crisp Bumble Bars. Alas, these ones were not as good. I appreciated the large flakes of coconut, and the chewy pineapple pieces, but this bar barely holds it’s shape, and feels either overly greasy or overly sticky. Not good features in a food you would want to eat on the go.

Zumba was a shakin’ good time, although they were taking photos of us for the class Facebook page. Umm…because I want photos taken of me while I’m sweaty and pretending I have any sort of hip movement that resembles what Zumba should be? Riiiiight.

When I got home, dinner was awaiting me.


Mom’s classic macaroni and cheese.


And homemade baking powder biscuits.


I added the sliced cucumber and hummus, because I felt like it.


Add a pile of green peas, and you have the full meal deal.


The rest of the evening was spent nursing a mug of chamomile tea with almond milk and Western Sage Cool Mint Creamed Honey and watching TV. I thought I’d get to bed before midnight, but here I am, past 12:00, and still writing. Once a night owl, always a night owl. Hoot!

    I haven’t made oatmeal in ages – I love my eggs and cheese too much! 😀

    We are loving the hockey games – were tied 1 a piece! Good luck tonight – are you going to watch the game?

    im in love with the muffin names. Hungry hiker.. omg! this made me smile so much. wow and ur oats really fluffed up nice. sometimes i find when i make them they turn out good.. other times its flat and gross..but still yummy.

    pea are soooo good. love ur big serving ❤ have a super day girl!
