Cinco De….What?

I’m kidding…I know (in theory) what it is. Or at least that I should have eaten something Mexican inspired today, or done a shot of tequila or something. But let’s face it – it’s not really an event here. At least not in my little world. Probably because it falls during hockey playoffs, and let’s be honest, that pretty much trumps everything until mid June.

Sadly, my May 5th did not include anything even remotely fiesta like. So you’ll just have to suffer through all the non-fiesta good eats I did consume.

I couldn’t decide on what I wanted for breakfast, so I ended up with a little bit of everything.

Yogurt sounded like a good idea, so I broke out the new Liberté Vanilla Greek Yogurt, and topped it with a bit of peanut butter, strawberry freezer jam, and granola.

Note about freezer jam (as someone asked) – it refers to the way you make/store it. Instead of canning it (using heat), you simply put it in the freezer. Or at least, that’s my understanding. Correct me if I’m wrong?

To go with my yogurt bowl, I toasted an Ezekiel English muffin, and topped half with some Western Sage Cinnamon Creamed Honey, and the other half with Artisana Cacao Bliss.

I think my indecisiveness still turned out a pretty good breakfast.

So that cinnamon creamed honey? Whoa! Talk about cinnamon! It was *almost* too much. I bet it would be great stirred into a bowl of oatmeal, but as a stand alone English muffin topping, it was a bit overpowering.

My morning was much the same as other mornings since school has ended – waste time on the internet, finally pry myself off the chair, and head out on a mission. Today, it was to the gym for some weight training fun. Can I just say how much I love that I can go to the gym in the middle of the day now? There’s hardly anyone there, so I can use whatever equipment I want right away. Then I can come home, shower, and still have my whole afternoon in front of me. Love!

Like today, I didn’t have to work until 3, so I knew I had time to make something great for lunch, utilizing these two ingredients.

The plan was to make some sweet potato fries with my new Bali’Sun Coconut Oil. Too bad my oven had other plans. I turned it on to heat up, then went to do some other things. Not paying attention to the actual time, I finally thought it was weird I hadn’t heard the oven beep to tell me it had reached temperature, so I went over to it, and the damn thing was still cold. So I turned it off, then back on, and it decided to heat up. Not sure what that was about, but it meant my lunch was eaten in parts.

I started with this delight.

Stuffed with hummus, spinach, avocado, falafel, cheddar cheese, and Greek yogurt. I sprinkled on a little dill and onion powder to make up for the lack of tzatziki.

That was devoured while I waited for part two of my lunch.

Super rushed sweet potato fries. I had to crank the temperature so they would cook in time for me to eat them and get to work, so they weren’t as crispy as I would have liked, but still tasty.

I simply tossed them in a little melted coconut oil, sea salt, and cracked black pepper. The coconut oil added such a great hint of coconut flavour. I am definitely making more oven fries this way again – hopefully crispy though!

All that lunch left me with a food baby as I was off to work. Good thing we wear aprons! LOL.

Work was super slow. Like…insanely slow. Since the Canucks game was on at 6:30, people were not grocery shopping as late as usual. And I was asked if I wanted to leave at 6:15. Um, hell yes! It was perfect timing for me to get home, changed into my jersey, and watch the whole hockey game. Too bad my team sucked ass and lost. But it’s all good – we were down 2 games to 1 last series and came back to win it all.

Dinner was tasty, but refused to behave for photographs.

Cracker coated chicken, steamed broccoli, and rice with soy sauce. It might not be exciting, but I like it. The kind of dinner I grew up with 🙂

I moved on from our loss to watching Criminal Minds and CSI:NY, while snacking on a little parmesan popcorn.

That would be a glass of water with lime in it. I’ve been really enjoying lime wedges in my water lately. And we have them on sale this week at work – perfect!

And now, I’m going to put myself to bed, and hope that whatever pollen is currently out there will go away so I can breathe again. Night!

    I love freezer jam… my gran used to make it when I was little and we would put it on icecream. YUM!

    Even though they were rushed, they still look great. I haven’t had a falafel in ages, I’ve never made my own. I might need to hit up a good little rest. and get some.

    I’m gonna have to try the sweet potatoes with coconut oil/butter. That sounds good.

    Glad you got out a bit early – but sorry your team lost! My grocery store sells tzatziki sauce for $3 for a 16 ounce container – so much better than when I tried to make it myself – I love that stuff! Nice improv with the dill though!

    Sometimes indecisive breakfasts are the best! And sometimes… they just lead me to eat a little bit of every single thing I can find in my kitchen. Those ones aren’t so good.

    Don’t feel bad, I didn’t do a celebratory thing for that cinco dia either. I didn’t even know it was may 5th yesterday. Goes to show how scheduled I am right now…

    I want that pita. Like BADLY. I’ve got to remember to try coconut oil on sweet potato fries too, that sounds amaaazing.
