Yup…that’s what you get for a title. I’ve sat here for a good 30 min just trying to come up with a title. Confession: I can’t write a post without a title first. Is that weird? You’d think the flow of the post would influence the title, but for me, it just doesn’t work that way.

Let’s hope my lame ass title doesn’t equate to a lame ass post!

So anyways…I slept in later than I wanted, which was a shame, as I would have liked to get some things done this morning. Oh well, it’s not like I don’t have, oh, all summer 😉

Breakfast was easy peasy.

A bowl full of Nature’s Path Pumpkin Raisin Crunch with some unsweetened Almond Breeze. I really enjoy how the almond milk works with this cereal.

Plus half a ruby red grapefruit.

I did manage to be somewhat productive today – I made an appointment to get my hair cut (finally), did some laundry, and ventured out to the gym. Not alot, but hey, it’s something!

For lunch, I wanted to use up the pitas we had in the drawer, but wasn’t up for another falafel pita (even though they are pretty amazing). After surveying the fridge, inspiration struck, and I was making pita pizza. And let me tell you – it was pretty freakin’ awesome.

I’m not a tomato sauce kinda gal, and we didn’t have any anyways, so I knew I was going to have to be creative in my sauce choices. I ended up spreading a thin layer of chive & onion cream cheese on the pita, and then spreading a wee amount of pesto on top of that.

Next was a layer of baby spinach (I’m still plowing through the giant container I bought), and a sliced up portabella mushroom.

I found some Ukrainian garlic sausage and thought it would make a nice addition, so I sliced up a bit of that, then topped it with shredded parmesan and a sprinkle of red pepper flakes.

I knew it was going to be good as soon as I could smell it in the oven. The combination of cream cheese & pesto sauce made an awesome base for the toppings. I highly recommend trying it, especially if you don’t like tomato sauces. I was sad when it ended. Sign of a good meal.

I had a little snack just before work, consisting of a sliced gala apple with Almond Budder Extreme for dipping.

Plus a glass of water with lime. Another one of my current obsessions.

Work was another slow evening, and I was there until closing. From about 8 pm on, it was seriously dragging. At least I’d brought along a good dinner.

Upon my mother’s request, I decided to eat up some of the soup in our freezer. Hiding in that thermos is a serving of my Stuffed Squash Soup. Tasted as good as I remembered. I can’t believe I haven’t made it into it’s own recipe page yet…you know, along with the other plethora of recipes I’ve posted and not made into recipe pages. Summer project anyone?

I also brought along a Hungry Hiker muffin (speaking of recipes without their own pages…)

And this trail mix type stuff my mom had bought at Costco. It contains pumpkin seeds, soy nuts, cranberries, and almonds. I added in a few cacao nibs for fun.

People at work thought I was eating popcorn kernels, until I explained to them they were soy nuts.

After work I was craving a cup of chamomile tea with some Western Sage Cool Mint Creamed Honey and almond milk. It’s the perfect evening tea combo. I also nabbed the chocolate covered blueberries I was given for participating in the muffin contest.

My intention was to only eat some, but the bag is sitting next to me, completely empty, and there was no one else in the room to blame. C’est la vie – at least I enjoyed them.

Now I’m sitting here, trying to decide on the perfect combination of books to order from Amazon.ca in order to make it to that even important $39 total, in order to avoid shipping charges. Does anyone else do that? Or am I just insanely cheap? Don’t answer that.

I must get back to my Amazon dilemma. Night!

    The pizza sounds amazing! I like tomato sauce, but sometimes use just pesto because I like that too. I bet the cheese was an amazing addition.

    I love trail mix. Mixed nuts mostly. Any nuts really, I’ve been going through them like a squirrel lately.

    I must say that a title is usually the last thing I do when I post. Hehe…

    That pizza looks great. The sausage on it looks really good and I like the cream cheese as a base idea.

    LOVE the look of that pizza.

    I placed an order with Amazon the other day and only went $1.74 over the amount required for free shipping. Completely on purpose, of course.

    A. water with lime is my signature drink. and when i’m feeling really sassy, or when i’m out for dinner and don’t feel like a boozy beverage, it’s club soda with lime. yum yum!

    B. i do the same thing at chapters. $39 for free shipping and i don’t want to spend a penny over!

    Oh my goodness that pita pizza looks amazing! + Pesto sauce replacing tomato sauce sounds like the tastiest idea ever. Have a great weekend!

    im freaking drooling over that muffin, its reminding me that ive gotta pick one up soon or make some at least. that pizza tortilla is DIVINE!
