Time Slipping Away

Sorry you had no post to wake up to. I was playing around with some things on the blog, and time just got away from me! I figured it was better to wait and post this morning, so you would at least get something coherent, and hopefully well written.

I had a very enjoyable sleep in yesterday morning, probably due to the fact that I was up past 2 am the night before. That is the downfall of summer vacation – the night owl in me is allowed to shine! Much like the sun on my breakfast.

I started off with the classic Greek yogurt/frozen blueberries/granola mixture.

And yes, I did mix in some peanut butter and maple syrup into my Greek yogurt. It’s just such an amazing combination – have you tried it yet?

Check out those frosty blueberries.

I also had to try out the cranberry bread we picked up at the farmer’s market the day before, and thought it would work with the herbed fromage frais we also bought. That whole sweet/salty thing.

With a cheery glass of grapefruit juice.

I was definitely right about the cranberry bread/herbed cheese combo. Delicious!

I was supposed to go to an appointment midday, but I could not for the life of me find the papers I needed to bring with me. So I was a very bad person, and called to cancel, saying it was a family emergency. I know, I’m horrible! But it was so last minute! I couldn’t very well tell the whole truth. I know, I’m so going to hell.

So instead, I had a chocolate.

Eventually it was time to make some lunch, and I knew exactly what I was going to make.

Yes, that would be the same pita pizza I made a few days back. So good!

The secret to the pizza? A base of chive & onion cream cheese and pesto instead of the traditional tomato sauce. Try it!

The rest of the toppings were the same, other than I used regular white mushrooms instead of a portabella.

I think this one is getting its own recipe page. You know, whenever I get around to updating that. Don’t hold your breath.

I was looking for something sweet after this, and remembered I had a Payday bar in the cupboard.

Wow, why don’t we  have these in Canada? Love the contrast of the sweet caramel and salty peanuts. Actually, wait…maybe it’s good we don’t have them here.

I considered going to the gym in the afternoon, but decided I would rather go after my volunteer shift at the hospital, so I packed my gym stuff, and off I went. Note to self – going to the gym right at 7 pm is not the best idea. Way too busy! I totally need to take advantage of my ability to go in the middle of the day.

By the time I got home, it was after 8 pm, and I was ready for some dinner. The family had toasted tomato sandwiches (gross!), so I was on my own to find something quick and filling.

The box of Amy’s Veggie Burgers called out to me from the freezer, so I heated one up, and threw it in a whole wheat bun with Little Qualicum Cheeseworks Herbed Fromage Frais, onion, dill pickle, avocado, dijon mustard, and lettuce.

Some farmer’s market cucumbers, snap peas, and hummus.

And some blue corn tortilla chips with salsa.

I also decided to break out my Zen Organics Matcha lemonade. The package says to mix 2 – 3 tbsp per 1 cup water, but I probably used half the amount of powder, and slightly more water, and it was plenty flavourful enough for me.

Don’t mind the weird lighting – it was starting to get dark, so I turned one of the outside lights on.

Later on in the evening I felt the need for a snack (when do I not have an evening snack?)

I kept with the matcha theme, and made a matcha green tea latte, and nabbed another slice of that cranberry bread. I know it will disappear quickly around here, so I don’t want to miss out on it’s deliciousness.

Time for me to head to work, but I shall leave you with this picture of my mom’s cat Wilson, who was pretty interesting in my latte last night.

You actually called to cancel an appointment? That’s definitely not going to send you to hell. If anything, it’s me who is going because I usually DON’T call. Oops. It sometimes makes things awkward though.

I use to love eating Pay Days! So caramelly and peanutty.. yum. My dad was also a huge Pay Day fanatic too.

I’ve cancelled appointments like that before. I actually have one at 7:30 tomorrow morning that I’d like to forget about! HA!
