Here Comes The Sun

I woke up to another beautiful, sunny day today. Looks like summer just might be coming after all! Although, it’s supposed to rain this evening, so maybe I’m getting ahead of myself.

Fortunately, I woke up free of a stuffy head, with only my sore throat remaining. That meant breakfast needed to be a soothing one for my throat.


There was one overly ripe banana in the fruit bowl that everyone was avoiding, so I decided to show it some love in a bowl of blended banana oatmeal.


  • 1/2 cup oats
  • 3 tbsp skim milk powder
  • 1 cup water
  • 1 super ripe banana
  • splash of vanilla
  • 1 tbsp peanut butter

Once cooked, I blended the whole lot with my immersion blender, scooped it into a bowl, and topped it with peanut butter, cinnamon creamed honey, and some granola.


Plus some orange mango peach juice, glowing in the morning sunshine.


What a great way to start the day.


I must not neglect my immersion blender anymore. I had forgotten how great a bowl of blended oats is in the morning.

With all that sunshine, I couldn’t just sit inside all day, so I took off for a walk around Rocky Point. The tide was out, but it was still a picturesque walk.





Once home, I set to work on making lunch.


Today I finally got around to trying a blogosphere favourite combination – sweet potato with almond butter.


I also polished off the last of the container of cottage cheese.


And made some red kale chips (although the kale was more green than red/purple) to go along with it. One of the best batches I’ve made in quite sometime.


I don’t know if I overcooked my sweet potato or what, but the almond butter/sweet potato combination seemed a little dry to me. Don’t get me wrong, the flavours went well together, but I felt it needed more moisture. I might try roasted a cubed sweet potato, and then using the almond butter for dipping next time.

As an afternoon snack, I mixed up some Tropical Tango Vega Shake & Go Smoothie with some water. Although I prefer the texture with almond milk, I just wasn’t in the mood for a milky drink.


I was also a little sad that the drink wasn’t more orange in colour, like the package. Not that I would want Vega to add colouring just for the sake of it – but I guess I expected something that matched the packaging better. Still had a nice flavour though.

While I sipped on my smoothie, Sienna lounged around on the dining room table.


Then I got in some quality time with the Wii before dinner.

Speaking of dinner – we had BBQ’d chicken.


Corn on the cob.


Plus peas and cucumber. And tomato slices, but we all know I’m not one for tomatoes.


Mom always insists when we have tomatoes that I put some on my plate, because she thinks it would make the pictures look better. So I took a picture of my plate and her plate simply for comparison.

Sure it’s more colourful, but I’m not gonna lie about what I ate just for the sake of photography! And besides, her piece of chicken is upside down. Total food blogging amateur 😉

Tonight was Zumba night, and it was tons of fun as usual. But the gym was so. freakin. hot. I was a sweaty mess at the end.

Good thing I knew there was some ice cream waiting for me when I got home.


A few little scoops of Coconut Bliss Naked Coconut ice cream, topped with fresh mango, hemp seeds, more coconut, and some Barlean’s Chocolate Raspberry Omega Swirl.


I swear there was some ice cream under there!


Mmm, mmm, good.

Other than some tv watching, catching up on emails, and online window shopping, that’s pretty much my Tuesday, June 8th. Alas, my two days free from work have come to an end, but at least I don’t work until later on tomorrow. No need for an early wake up call – the best part of being on summer holidays from school! Now, I must sleep. Night!

    Your cat looks so laxed just laying there like that. I’m a sucker for cats.
    The park looks really nice, and I’ve never thought of nut butter on a s potatoe. Interesting.

    You’ve had some great eats today…and a gorgeous place to walk!

    I saw that smoothie mix in the store last night and was shocked at the cost of it. Mind you, I’ve never had protein powder in my life so am no pro at the cost of it….

    thats one of the most balanced lunches and dinners i have seen in a long time!

    sorry about ur throat.. i find when summer approaches i always get little bugs/colds.. it could be the pollen too tho huh… lots of dif airborne allergies right now.

    good call on the breakfast.. really creamy oats always helps me.

    gosh and what a gorgeous place to visit- loving the nature and that gorgeous sunshine!

    I keep seeing the sweet potato and nut butter combo but for some reason I never even considered trying it. Now I want to though.. just because. 😀

    Shoreline Park looks so pretty! I’m jealous that you had sun today since it’s been cloudy and rainy here. The weekend is supposed to be lovely though!

    If you think sweet potato with almond butter is good, you should try adding the cottage cheese in there too–they make a lovely trio of flavors!
