Mash Up Monday

Yes, I know it’s Tuesday, but I’m going back in time and bringing you all the fun from Monday, including some tunes, and a giveaway winner! Let’s get started!

My Monday did not start out as planned, when my mom’s cat thought waking me up at 5 am to be fed would be an awesome idea. I kicked him out of my room approximately 5 times before he finally clued in. It wouldn’t be so bad if it was just him whining, but Sienna gets all riled up and starts hissing and growling, and it’s a bit much. Needless to say – I totally slept in.

Fortunately I had the day off, so I took the time to make a tasty bowl of oatmeal.

It was your basic bowl of banana oats, with strawberries thrown in for fun.

  • 1/2 cup oats, milk, water
  • 1 banana
  • 1 tbsp flax seed
  • splash of vanilla extract
  • local BC strawberries
  • sunflower seed butter
  • chocolate chips

I basically puttered around for the rest of the day, as I just felt completely exhausted. Work + BBQ’s + late nights + early wake up meows = sleepy. Eventually I got a little productive, and cooked up some black beans I had soaking in the fridge (for a project), then threw together a plate of things for lunch.

It started off with some leftover shrimp from my friend’s place. They were just going to throw it out since they were going out of town for a few days, so I gladly took it home with me.

Then I toasted up the last nub of spelt sourdough bread, and spread on some garlic scape pesto.

Chopped up a carrot to go with some caramelized onion hummus.

And made kale chips with the last few leaves remaining in the fridge before they went bad.

Sort of random, but it’s fun to have a plate full of different flavours and textures like that 🙂

My day of relaxation was then interrupted with my last volunteer shift at the senior’s manor. When I got home, my parents had returned from their weekend trip, and I was in search of food. But I couldn’t decide on what to have for dinner, so I went for a walk instead. Upon my return, inspiration hit, and I soon had a plate full of tasty eats.

One lonely Amy’s California Veggie Burger remained in the freezer, so I heated it up, and dressed it with some cheddar cheese, sweet pickles, lettuce, mayo, mustard, and ketchup.

Then chopped up a gala apple to enjoy with a big blob of peanut butter.

It was almost too filling!

Finally, I shall end my Monday Mash Up with my second instalment of Marianne’s Music Mondays. This time it’s only one song – one that I have long considered the “theme song” to my life.

U2 – I Still Haven’t Found What I’m Looking For

Once, many years ago, my friend’s put together this little get to know you quiz that we all did for a party, and I remember putting this song down as my life’s theme song. I always figured one day it would change, because eventually I’d find what I’m looking for. And in some ways, I have, as I’m moving on to a career I truly believe in and feel passionate about. But when I look at other aspects of my life, I’m not there yet – I don’t have that special someone, I want to own my own house, etc. I’m still on that journey, and I’m still searching.

    Gala apples are the best!! Although lately they’ve been a little mushy in my parts. I don’t think that anyone can find what they’re looking for – once something is found, there’s always something else to find. <- that was deep.

    I love your shrimp plate!! And I love making plates of random stuff too.

    I actually saw U2 in 1989 – so good!

    IFamily wise, happiest I’ve ever been . My job is so boring though!
