The Weekend That Was

Hello there blog-a-roos! How were all your weekends? Did you celebrate Father’s Day with the dads in your lives? I didn’t – mine took off with mom to Calgary for the weekend. But I have spent the past 3 days working full shifts every day, and enjoying a couple of BBQ’s, including my sister’s birthday celebration. Go, go, go – it was fun, but I was tired, and posting was just not in the cards. So I shall just bring you the food highlights of the weekend. Sound good?

Friday

Since I didn’t have to work until the afternoon/evening, I not only took the opportunity to sleep in, but also made a fabulous breakfast.

French toast! It was a given when I bought that delicious loaf of spelt sourdough bread.

I soaked a couple of slices in a mixture of 1 egg, milk, and vanilla. So simple.

Topped with peanut butter, maple spread, hemp seeds, and local BC raspberries.

Plus a glass of Happy Planet Extreme Green juice – I’ve missed the green juice.

And look – the sunshine came back!

Breakfast was late, and super filling, so I never really had a lunch. Instead I made a smoothie with some Tropical Tango Vega Shake & Go Smoothie, a mango, yogurt, milk, and coconut extract.

I had a stack of tupperware filled with delicious eats for dinner at work.

There was a giant salad with romaine, ham, corn, cucumber, carrots, and havarti (with ranch dressing).

Plus some other random food I cleaned out of the fridge – half of a grapefruit and leftover roasted potatoes and mushrooms.

After work, I was peckish, and went for a bowl of Kashi Honey Puffed cereal with milk, raspberries, and chocolate chips.

Saturday

Oh, Saturday morning came far too soon. I worked Friday until 10, and had to be back at 8 am. Let’s just say I was one tired Marianne all day. I was only scheduled to work until 12:30, but someone called in sick, so I stayed for a full shift. My plans of hitting up the gym and having a nap after work were shattered, as my sister’s birthday BBQ was happening that night. The perils of trying to make a little extra cash.

Speaking of the BBQ – we had quite the spread!

Grilled teriyaki chicken breasts, grilled pineapple, sweet pickles, mayo, whole wheat kaiser bun.

Veggies, caramelized onion hummus, and sweet potato salad.

Plus some fruit – including local BC strawberries.

And check out what we had for dessert – chocolate VitaMuffins. Yes, my sister picked up a blog world favourite. I passed on the Cool Whip, and topped mine with coconut butter, and surrounded it with raspberries.

Sadly, these were pretty lame. Sorry blogworld – VitaMuffins are overrated. Especially for the price. I could make a much tastier product. At least I know I’m not missing out on anything.

Sunday

Did I mention I also had to work Sunday morning? And that peeps didn’t leave our house until sometime after midnight? Yeah…and here I thought I was tired on Saturday. I was actually lucky I woke up for work – I set my alarm for 6:45, fell back asleep until 7:45, and had to be at work at 8:45. I don’t move quickly in the mornings, so I need all the time I can get!

I probably wouldn’t have even bothered photographing any food that day, but I had to show you my lunch.

Since we had the BBQ fired up for the party, I took the opportunity to grill up some vegetables – baby eggplant, portabella mushroom, and red pepper.

I also made good use of the garlic scapes I got at the farmer’s market on Thursday and made a pesto – 1 bunch of scapes, large handful of walnuts, 1 cup (or so) grated Grana Padano cheese, and at least 1/2 cup of extra virgin olive oil.

So on a D’Italiano Whole Wheat Thintini (think those Sandwich Thins all the US bloggers use), I spread on some garlic scape pesto and topped it with the grilled veggies. Slather on a wedge of Laughing Cow cheese on the other half of the thin, and you’ve got yourself a sandwich!

You better believe this was pretty phenomenal. As I sat in the lunch room at work eating it, people commented on how good it looked. And again, while I ate my veggie sandwich, someone asked me if I was vegetarian. I’m not sure why people always assume that of me when I bring meals devoid of meat products. I find it odd, especially considering the culture here on the west coast. Perhaps that’s what you get when you’re out in the suburbs?

With another 8.5 hour work day behind me, I rushed home, got changed, and was out the door to a friend’s house for another BBQ. On the menu – shrimp cocktail, steaks, sweet potatoes, regular potatoes, and salad. All was delicious, especially when washed down with a Caesar 😉 By the time I got back home though, it was all I could do to not fall asleep standing up. I was beat!

So, how was everyone else’s weekend? Get up to anything fun? Or did you get to chill out and relax? That’s what I’ll be doing for the next few days. Definitely looking forward to it!

    I love those thintini’s! We bought them for burgers a few weeks ago and now we use them for everything.

    It’s all about the Vitatops – Vitamuffins are nothing to write home about, I agree! Thintini is such a cuter name than ‘Sandwich Thin’. I’m fairly certain after my Tweet that you know how I feel about that sandwich – yum!! Hope you caught up on some sleep!

    Love your French toast and BBQ food! Delicious! Sounds like a great weekend, too….aside from all the working, of course. 😉
