Sun-kissed

It is official – summer has arrived to Metro Vancouver. Can we say about freakin’ time? It’s only July 5th. Today was sunny and pleasant, but they are talking we might get temperatures up over 30 degrees C inland from the water this week. Sure, it’s nothing like the heat wave going through the east or in Europe, but that’s still hot to me!

I was out of bed bright and early not only because of work, but also to register for my classes. It went as smoothly as I expected – I got the classes I knew I could register in, and couldn’t register in those where there are prerequisite issues due to me doing classes at a different university (as someone with a previous degree, they don’t give me any official transfer credits, which makes the whole thing a pain).

Since I had to send out some emails in regards to these classes, I went uber-easy with breakfast.

I bought the juice in hopes that it would be somewhat like the old Sun Ripe Apple Lime juice I used to love as a kid (that they no longer make). Because the pomegranate is cut with pear juice, it was eerily similar. It would have been better had I refrigerated it before consumption, but it was a nice treat to take me back to my youth.

I only had a quick 4 hour shift this morning, so I just grabbed (just wrote crabbed) a Cocoa Coconut Chew Larabar for my break.

It was our store manager’s birthday today, so we ended up having some cake as well. I had a wee slice, and made sure to pick the one with the least amount of icing. If there is one thing I do not like, it’s the icing on store bought cakes. I’m a icing snob – it’s gotta be homemade, or it’s just not good.

After picking up some dinner items on my way home, I was more than ready for lunch by the time I walked in the door.

Since my hummus/cucumber/aged white cheddar bagel melt from a few days back was so good, I decided to reprise it. But this time, I mixed tuna with the hummus, topped it with sweet pickles, and then the same cheese.

I forgot to mention – while I was at work, the powers that be registered me in my remaining three classes. So now I’m officially in all of my required classes for this coming year of school. Starting in September, my time will be spent studying these riveting subjects:

  • Food Theory and Food Theory Applications (aka – cooking lab!)
  • Fundamentals of Nutrition
  • Vitamins, Minerals, and Health
  • Nutrition Assessment
  • Research Methods in Human Nutrition
  • Human Physiology
  • Land, Food, and Community II
  • Professional Dietetic Practice I

The ones I’m most looking forward to are the Vitamins & Minerals class, and the Food Theory, because anything that involves cooking is automatically awesome. What I’m not looking forward to is the $6400 price tag associated with this year of school. EEEK!

All this excitement caused me to pass out on the couch for a nice afternoon nap, followed by some news watching. Then I put together dinner for the family. On the menu – deli sandwiches.

In a whole wheat Portuguese bun I layered ham, turkey, jalapeno havarti, sweet pickles, lettuce, mayo, and dijon mustard.

Don’t worry, I did eventually get out and enjoy the sunshine this evening with a great walk around my neighbourhood. An idea I shared with half the people living around here apparently – I saw people playing tennis, soccer, running, walking their dogs. That’s what happens when it’s not raining here, everyone emerges from their homes to bask in our great west coast outdoors. Love it!

Today is also Marianne’s Music Monday! I didn’t have anything planned for you today, but this post brought a song to mind…

    Your courses all sound really interesting. If I were to go back , and if I was the person then, that I am now, I could see myself taking a similar path. Agriculture/health were good choices for me at 19 and in my 20’s,. I thinK i’d switch the health admin for nutrition now.

    You had me at jalapeno havarti!! Looks delicious. Glad all your classes are set up – my daughter is registering today!

    Although her first two years are free for our local community college if she does 16 hours of community service each semester – sweet! Plus, she’s still not sure what she wants to do – she’s leaning toward speech pathology – we’ll see!

    Ah yes, the joys of registration–NOT looking forward to that process in a few weeks. BUT at least we’re starting nutrition classes, right?

    I’m not a lover of store baought cake icing, either. WAY too sweet.
