A Day Late…

“…a buck short/I’m writing/the report…”

So, although we caught up on the weekend, we didn’t get to Monday. I know, you were all worried. How could I skip over Monday?! But no worries – I’m bringing it to you now!

I actually thought about combining Monday & Tuesday together, but Tuesday was such a jam-packed, action filled day, I feared the length of the post would put you all to sleep. Or it could just be I lack the attention span to write that much right now. So Monday only it is!

An 8 am opening shift had me emerging from slumber way earlier than I would like for a Monday. Plus it was cold out! I made the best of it though, and used my time to make a great bowl of oatmeal.


  • 1/2 cup oats, milk, water
  • sliced fresh strawberries
  • splash of vanilla
  • 1 tbsp flax seed
  • Artisana Coconut Butter
  • cashew butter


With some Happy Planet Extreme Green juice.


See how there were even a few rain drops on the table outside? Let’s be honest, not really unexpected. It is Vancouver after all.

Work was a quick little shift. The bakery case kept calling to me while I was there. I may have grabbed a snack. It may have been a double chocolate muffin.


But at least I still had half leftover to bring home with me.

I made a quick lunch when I got home, starting with a baked sweet potato, with cottage cheese and salsa. Light on the cottage cheese (since there was only a spoonful or so left), heavy on the salsa.


Plus a green salad with some overly sweet raspberry vinaigrette.


Oh yeah – by the time I got home from work, the sun had come back. Go figure.


The rest of the day was spent…doing something. I’m not really sure what. I had though about napping, but never got around to it. I’m easily distracted.

Dinner time came around. Burgers were on the menu. I wasn’t in the mood for a beef burger, so I turned to my friend Amy and threw a veggie burger on the grill.


Atop some garlic scape pesto rested the burger, topped with some aged white cheddar, and a pile of sautéed mushrooms.


Lettuce, pickles, onion, mayo, and dijon rounded out the rest of the toppings.


Along with some oven fries, carrots, and cucumber.




Another great summer time dinner.


I made time for an evening walk around the inlet, then came home and chillaxed. That’s what happens when you’re up early for work.

Yeah, so that was kinda short. But Tuesday will be kinda long. So take a break, and I’ll be back tomorrow with some more foodie fun. Even Sienna is resting up.

    Nice Blink reference! I still love them, I won’t lie.

    That dinner? Perfection! I’m going to have to try some sauteed shrooms with my veggie burger next time. Genius addition!

    What a tater! I’m hungry for one now. I also wish I was curled up and sleeping like Sienna now! 😉
