Sitting, Waiting, Wishing

Yesterday was a weird day. I didn’t have to work until 5:45 pm, so I felt like I was waiting around all day just to go to work. Not that I didn’t do anything all day, but it’s that looming promise of a boring work shift that’s always in the back of your mind, ya know?

So what did I do whilst waiting for work?

I read about salads in the newspaper.

I ate a yogurt mess for breakfast.

Greek yogurt, peanut butter, blueberries, maple syrup, granola. Plus a glass of juice.

I found Steller’s Jay feathers in our backyard.

And attempted a frozen vanilla matcha latte.

It’s still a bit of a work in progress. But I will tell you it involves matcha, ice, almond milk, vanilla, and agave.

I admired our gorgeous purple hydrangeas in the front yard.

And took a quick run up to the farmer’s market, to grab a loaf of A Bread Affair bread. I was there pretty late, so they only had to kinds. I went with the spelt sourdough, which I of course had to use in my lunch. I toasted up a slice, spread it with red pepper jelly, topped it with spinach and mozza, and broiled it a bit to get all melty and delicious.

Paired with a juicy black velvet apricot.

And a handful of farmer’s market snap peas.

I also washed my running shoes. Too many trail walks = extremely dusty shoes.

Then came that time, where I had to pack up my dinner to take to work with me. Good thing I knew exactly what I was taking.

Leftover Cucumber Dill Wheat Berry Salad, topped with west coast shrimp and avocado.

Along with a little container of fresh raspberries I grabbed while at the market in the morning.

There really are no excuses to not eat healthy and eat well in the summer. Not when food like this is available.

Work was just as I expected – slow. Sunday night isn’t exactly prime grocery shopping time. All that sitting, waiting, wishing for nothing spectacular. Ah well, such is life.

    I know exactly what you mean–I often work the 4-8 shift for my job, so I feel like I sit around all day, waiting to go to work.

    I always have that feeling too! Waiting to work… ugh.
    Oh and guess what? I put maple syrup in all of my yogurt mess now because I was so inspired by you 😉

    That mozz!! It looks fantastic! I hate when you have weird work hours. I used to have Saturday afternoons from 2-5:30 tied up with my sport and it drove me crazy because I couldn’t really do anything before and then after I’d be too tired to do anything.

    That bread with the red pepper jelly, spinach and mozza sounds amaaaaazing. I haven’t had red pepper jelly in a while but I LOVE it. I think I need to get some again asap.

    Love that song too, SO much. I need to get it back on my Ipod!
