Slept In…Twice

In one day even!

Such is the story of my life, eh? I am forever sleeping in. You’d think eventually I would learn to just go to bed earlier, but I’m a night owl at heart. I just can’t do it!

And this is the reason I’m posting about Tuesday now, on Wednesday evening at 11 pm. Think I’ll be going to bed early tonight? Fat chance.

Tuesday I was up early so I could head out to work. But not quite early enough to make the oatmeal I had planned. So I went to plan B.


Trusty ol’ toast with pb + j. Always there for you when you’re in a rush. Always delicious, and always filling. Especially when you use a good sprouted grain bread like Silver Hills (with peanut butter and strawberry freezer jam).


But you definitely need something to wash it down with. Like a glass of Happy Planet juice.


Opting for this breakfast also meant I had time to throw together my packed lunch.


Some Cream Of Lettuce Soup (and by lettuce, I mostly mean spinach).


Carrots and snap peas.


A cornbread muffin.


And half of a grapefruit.


Not bad for something I threw together in 5 minutes. Although it helps when you have readily available leftovers in the fridge 😉


Although I had a 7.5 hour shift looming ahead, I was looking forward to it, because I was splitting my time between my regular cashier job, and doing some personal shopping. And because of how the schedule went down, I ended up with two of my breaks together so I had a 45 min lunch. Nice to kick back and leisurely eat, instead of the usual rushed meal.

I was tired when I got home, and eventually came to the conclusion it would be prudent of me to have a nap in order to function at Zumba later on. Of course, it did mean sleeping through dinner. Good on one hand, because the family was having pasta with tomato sauce…and we all know how I feel about tomatoes. Bad on the other hand, because I meant I was famished by the time I was done Zumba!

I managed to hold off eating whatever crossed my path in the kitchen, and put together something that resembled a meal. Featuring my farmer’s market find – artichoke relish.


Fancy relish can only mean one thing.


Veggie burger time! Amy’s to the rescue with her California veggie burger, dressed up with the relish, Laughing Cow, dijon mustard, and spinach.


This quieted the grumbling in my belly in no time flat. Although I did have to go back for some frozen grapes later on, just because.


Obviously it was much later on – check out that horrendous indoor lighting. I’ve been spoiled by summer and its gift of natural lighting all day.

So I have a goal – to not sleep in tomorrow and bring you my fabulous day of Wednesday eats in a timely fashion. But if I’m gonna achieve that lofty goal, I had better find my way to bed stat. Night!

    Artichoke relish sounds great. That is something I’ve never seen before, but I could definitely see how the sour flavor would be very nice in a relish.

    while i was reading this post, i saw “california veggie burger” and started singing “california gurrls” in my head…with “veggie burger” in place of “gurrls” somehow. amy’s should look into doing a parody for promo purposes; it’d be a hit!

    That artichoke relish sounds delicious! Pb and J on toast is probably my most favorite food in the world. Great blog!
